One of my favorite things about the coming of spring (yes, it’s coming!!!) is the fresh, new recipes that I begin adding back into our rotation. Winter is all soups, stews and comfort foods, but spring brings a lighter fare to our table! And it also brings cooler foods for the warmer weather.
Shamrock Shakes always makes an appearance as a special treat for my kiddos during the month of March!
Since this is a special treat in my family, I decided to document it in a layout instead of just making a recipe card for it.
Here’s the basic recipe for Shamrock Shakes:
1 1/2 cup vanilla ice cream
1/2 whole milk
10 drops green food coloring
1 teaspoon peppermint extract
whipped cream
In a blender, combine the vanilla ice cream, milk, green food coloring, and peppermint extract, and process until smooth, about 30 seconds. Pour the shake into a glass and top with the whipped cream.
This year I decided to make things a little healthier by substituting frozen yogurt for the ice cream (I used cookies & cream flavor) and almond milk for the whole milk. I am thrilled to report that these changes didn’t change the delicious taste of this treat!
I also added Lucky Charms cereal on top of the whipped cream for an even more festive look and my kids thought this was lots of fun!!
We enjoyed this special March treat for dessert earlier this week and we’ll definitely enjoy it again on St. Patrick’s Day.
