Polly Liana here, with a fun and easy recipe for an interesting and delicious snack. In my classroom we’ve been studying the kingdoms of the Nile and I came across an ancient recipe from Egypt. Some call it “Tigernut Sweets” but it’s unclear how the name was given. My students and I had a great time making them together and everyone was amazed that there wasn’t any added sugar– the dates and honey add all the sweetness they need. Let’s get to it!
Ingredients:
200g fresh dates (remove pits)
1 tsp cold water
10-15 walnut halves or chopped walnuts
1/4 tsp cinnamon
1/8 tsp cardamom
small amount of runny honey
75g ground almonds
Process:
- chop the dates and put in food processor
- Add the water and pulse until they are blended
- Add the walnuts and spices
- Pulse until coarsely blended
- Shape mixture into balls with your hands (this is sticky!)
- Put the ground almonds on a plate and the honey in a shallow bowl
- Dip the date balls in the honey and roll in the almonds
