Greetings, Pad Scrappers!
Polly Liana here with a yummy, light recipe just in time for the heat waves of summer. I grew up in Hawaii and these fresh Vietnamese summer rolls were a common staple in my diet, especially when I learned how to make them myself. They are a lot easier to make than you might think and with the recipe I’m providing here, they’re pretty healthy too. Here’s what you need:
Ingredients for the Summer Rolls
- 1 package of spring roll rice wraps (usually found in Asian or tofu section)
- 1 bag of medium/large cooked frozen shrimp, defrosted, tails removed
- 1 or 2 bags of Shirataki Tofu vermicelli or “Miracle Noodles” (usually found in in refrigerated tofu section)
- 1 cucumber, sliced thin in three inch sections
- fresh lettuce leaves
- fresh mint and basil leaves
- 1 or 2 avocados
Ingredients for Hoisin Peanut Sauce
- 4 tablespoons soy sauce
- 4 tablespoons smooth peanut butter (unsalted, if possible)
- 1 tablespoon dark brown sugar
- 2 teaspoons rice wine vinegar
- 1 garlic clove, finely minced
- 2 teaspoons sesame seed oil
- 1 teaspoon hot sauce (more or less to taste)
Mix it together and blend with hand blender
After you’ve prepared your ingredients above, start by prepping your rice wrap. They are translucent and firm but when you run them under water on both sides, they eventually become stretchy and pliable. Wet a wrap well under running water and put on a cutting board.
Lay four shrimp down side-by-side, close to bottom of wrap
Lay lettuce on shrimp (makes a nice contrasting color when the roll is finished)
Lay handful of vermicelli on top of lettuce (this is a special tofu vermicelli that has only 20 calories for the entire package! This serving is around 4 calories.)
Add cucumber slice, basil, mint and avocado
Roll bottom of wrap up and over ingredients and tuck in
Fold sides over semi-tightly
Keep rolling until wrap is all wrapped up
Serve with the peanut sauce. I’m sure mine is not as pretty as the rolls you can find in a Vietnamese market but my husband and daughters gobbled up eight of them so I had to make more! It’s a great, light recipe that incorporates lots of fresh summer ingredients.
