Well, like most of you, I have far more time on my hands these days!! I got all nostaglic and decided to make one of my mom’s recipes. Since she passed away three years ago, I wanted to make something that she used to bake that was comforting to me. Plus – my kids were all excited to cook. They were bored – ok.
Now, the difference between my mother & I is this – everything she cooked, could have been featured in one of those fancy cooking blogs. You know the ones, the ones where they talk about how crisp the fall air is as they are featuring a recipe for an apple pie. Me…not so much. Now, my food taste good – it’s just not pretty! Please remember that with the photos below lol Just keeping it real here ya know!
So, I made my mom’s famous Banana Cake – and I just love old hand written recipes, especially when they say “oleo” as an ingredient. Brings out the Mayberry in me. Below is her recipe and my “beautiful” finished product. (it was delicious for the record!)

I have a favorite coffee cake recipe that I’ve had for 45 years…I got it from a Canadian friend who I used to babysit for. :) I will make it later this week. Yesterday, today, and tomorrow I will be canning lemon juice in pint jars. I was gifted a very large box of lemons. Yesterday, I squeezed 80 lemons and was able to can 11 pints. Today was half that many and tomorrow will be the rest of the box…about 25 lemons. I was really happy since only 4 of the lemons in the box were bad. Unfortunately, they aren’t organic so I’m not “zesting” them. :)
