Here are a few quick and easy recipes for those busy nights when cooking is the last thing on your mind. Hopefully these will give you some extra scrapping time in your evenings. 😉
Honey & Garlic Porkchops
1.5 lbs. chicken breasts
3 tbsp soy sauce
6 cloves garlic, minced
6 pork loin chops, boneless, trimmed of excess fat, 4 oz each
In a shallow dish, whisk together honey, soy sauce and garlic.
Coat chops in mixture.
Reserve left over honey mixture for basting.
Place chops on greased grill over med high heat, close lid and cook. basting 2 times.
We made these this week, and they were tasting. I recommend marinating these chops all day prior to grilling.
Taco Chicken Bowls
1.5 lbs. chicken breasts
1 jar salsa (16 oz)
1 can black beans (drained)
1 cup frozen corn
1 Tbsp chili powder
1/2 Tbsp cumin
1/2 Tbsp minced garlic
1/2 tsp dried oregano
1/4 tsp cayenne pepper
1/4 tsp salt
Add everything to the crockpot and cook on low for 8 hours (or med/high 4 hours). Top with sour cream, fresh cilantro, and cheddar cheese. Serve in a tortilla, over rice, or lettuce.
Cheesy Vegetable Soup
3 cans of chicken broth (or use soup base + water to equal 45 oz.
2 lb. California frozen vegetables (carrots, broccoli and cauliflower)
1 can of Rotel
10 oz. of Velveeta
2 cups shredded chicken
Simmer vegetables, rotel, chicken, and chicken broth 35 minutes or till tender. Turn it off and add 10 oz of Velveeta.
Weight Watchers Bacon-Cheddar Turkey Burgers
2 slices uncooked bacon, cut into small pieces
1 lb. uncooked ground turkey
2 oz. low-fat shredded Cheddar cheese
1 tsp. Worcestershire sauce
1/4 tsp table salt
1/8 tsp black pepper
Cook bacon. Combine ground turkey, bacon, cheese, Worcestershire sauce, salt and pepper in large bowl. Form into 4 patties. Place patties on broiler rack and broil, 4 inches from the heat, until an instant-read thermometer inserted in the side of each patty registers 165 degrees (3-4 minutes on each side).
We made these for dinner last night, and they were quite tasty. If you weren’t looking for a light burger, I would add double the bacon and cheese to make them even tastier.
