Polly Liana here, with a quick recipe today for scrumptious popcorn. This is the perfect time to make popcorn here in the northeast– it’s not warm enough yet for ice cream but not cold enough anymore for hot chocolate. Popcorn is the perfect cozy, tasty treat for an evening snack and especially lovely when you’re needing to munch on something while you’re scrapping or hanging out in the forums here at The Lilypad. I’ve got a recipe here that will blow away anything you could possibly pull out of a microwave, both health and taste-wise. Plus, it makes your kitchen smell divine. If you follow the directions closely, it should leave very few of those vile unpopped kernels that can cause all kinds of dental misery. So, without any further ado, let’s get started.
1. First, you need popcorn kernels and canola oil. I prefer to top mine with coconut oil and Old Bay. You’ll also need a large bowl and a medium saucepan with a lid.
2. Measure 1/3 cup of the popcorn and put aside. Pour 3 tablespoons of the canola oil into the saucepan.
3. Toss four (4) popcorn kernels into the oil, and put the pan on medium heat. And for goodness sakes, cover the pan! You don’t want those little guys jumping out as they pop!
4. Wait until you hear all four of the kernels to pop. This will indicate that the oil is hot enough to do its job. Remove the pan from the heat but leave the stove on. Quickly, pour the rest of the popcorn into the pan, cover it again and count slowly to 30. You’re heating the other kernels up so they can pop efficiently. Get your bowl and toppings ready for the next step.
5. When you’ve reached 30, put the covered pan back on the heat. The popping will start within 30-45 seconds and when it does, start shaking the pan to keep the kernels moving inside. When you hear the popping reduce to 3 seconds between pops, remove it from the heat and pour it in your bowl.
6. For a topping, I like to heat up a bit of coconut oil in the hot pan and pour it over the popcorn. It gives it that “slippery” feeling of butter, but much better for you. I also toss it with some grated pecorino romano cheese and Old Bay seasoning. Yum! What do you like on your popcorn?
