Oatmeal Banana Coconut Cookie Recipe

Polly Liana here, happy to share a favorite cookie recipe in our house. My kids love them because they’re yummy and easy to make and I love them because the ingredients are mostly healthy. The bananas sweeten them and the grains make them nice and dense.
Here are the ingredients…
Wet:
2 whole ripened bananas
1 Tbsp vanilla extract
2 Tbsp coconut oil
Dry:
1 1/4 C old fashioned oats
4 Tbsp almond meal or wheat bran
1/3 C unsweetened shredded coconut
2 tsp cinnamon
1/3 tsp salt
2/3 baking soda
1/3 C semi-sweet chocolate chips
Directions:
Preheat the oven to 350 degrees F
In a larger bowl, mash the bananas with a fork until they’re easy to stir. Then add the vanilla and coconut oil.

In another bowl, mix the dry ingredients (oats, meal or bran, coconut, cinnamon, salt and baking soda).

Add the dry to the wet and mix. Add the chocolate chips.

Roll them into small balls and flatten a bit. Put them on a baking sheet lined with parchment paper. They won’t spread much.

Bake for about 20-25 minutes or until firm.
