Hello pad scrappers!!
We are full on into enjoying all of our holiday activities right now. I don’t know how, but we seemed to have scheduled everything Christmas-y in the last two weeks.
Last night we finally went to see the Grinch movie. I have always loved the Grinch movies and have fond memories of watching the really old one at my grandparent’s home during Christmas time. And the Jim Carey version is has been a favorite as well, so I have been really looking forward to seeing this.
I was almost as excited about seeing it as my kids.
In order to make our night out at the movies a little extra special, I made Grinch Pancakes for dinner before we went. I am here to happily report that they were a huge hit!!
If you want to do something fun with your family, I suggest you make these Grinch inspired pancakes and pop in one of the older Grinch movies or head out to the movies to see this year’s version!
Here’s the recipe for Grinch Pancakes (it makes approximately 24 pancakes):
Ingredients:
4 cups pancake mix
2 cups milk
4 eggs
3 T sugar
2 t baking powder
2 T vegetable oil
1 t vanilla extract
*Green food coloring
*whipped cream & sprinkles
Directions:
1. stir ingredients until blended
2. add in green food coloring to get the desired color of green batter
3. pour about 1/4 cupfuls of batter onto hot greased griddle
4. cook until edges are dry, turn and cook until golden
5. top with whipped cream and red & green sprinkles
I hope you enjoy this recipe!!! And if you want to make some festive pancakes for Christmas morning, I suggest using this recipe and coloring your pancakes red and green with food coloring…it’s such an easy way to make simple pancakes a little more special.
