I’ve always been a big fan of easy and quick meals and this applies to desserts too. A recipe I recently came across on Pinterest was both easy and quick, and also very tasty. It allows for some variation too. It’s made in the microwave in just over a minute. Since I’m following a keto diet this fits into my plan but feel free to alter this to suit your dietary preferences.
What I also like about this recipe is that it is a single serving; it prevents me from over-eating and consuming too much food in the evening which is when I typically make this cake. You can find the Pinterest post HERE.
My preference is to use erythritol but whatever sugar you prefer can be substituted. I’ve made it with just almond flour (when I’ve run out of coconut flour). I’ve added in bits of dark chocolate and sometimes use other extracts instead of vanilla. Once the cake has finished microwaving, I pour about 1-2 tbsps of sugar free syrup overtop; my fave is white chocolate or raspberry. You might enjoy using Cool Whip, whipped cream or cream cheese frosting. You can add some spices, nuts and/or raisins too.
