Something Sweet: Polka Dot Pumpkin Cupcakes

If you spend any time at all browsing Pinterest or other inspirational websites, I’m sure you’ve noticed the influx of fabulous recipes that just seem to exude a feeling of fall. In this part of the world, it’s that time for fall weather, and sweaters, and the return of hearty meals and warm, inviting deserts. One of the ingredients that is taking center stage right now is pumpkin.

I confess, I never was much of a pumpkin fan. In the past few years, though, I’ve developed quite an appreciation for this delicious fall fruit that has made me realize what I’ve been missing out on all this time. Mmmmm… it’s just GOOD. So in my internet browsing over the past few weeks, I’ve pinned, saved, or printed various pumpkin recipes to try. Last night I gave this one a whirl: Polka Dot Pumpkin Cupcakes, originally posted at verybestbaking.com.  I made a variety – some with the topping, some with just chocolate chips, and some mini muffins (great for portable after-school snacks!!).  Here’s how mine turned out…

The verdict: They were a hit! We even have one cheesecake hater in our family (we try not to judge), and he actually preferred the cupcakes with the cheesecake topping. The muffins without the cheesecake topping are a great alternative for lower sugar, and are fabulous served warm with a bit of butter. And the tray of mini muffins that I made will most definitely be today’s after-school snack in the van.
