What's for dinner? Or lunch?

So, if you haven't seen it elsewhere, I'm watching my siblings. My son is a great eater, but my siblings are NOT! They are so picky. Sigh.
I don't think I can handle hot dogs, hamburgers and quesadillas for the next two weeks! So, I'm hoping one of you are having a dinner they will eat! :agree

So, chicken quesadillas is on my menu tonight for me and munchkin, the other kids will have cheese quesadillas. What's on yours?
 
Chicken Tacos or Chicken Taco Salad - However you want it! My kids all like it.
I'm also making extra to take to a friend who had surgery. I figured it was an easy dish for her kids to make however they want it.
 
We're doing pork chops & salad (our garden is overflowing with lettuce & spinach!) My kids aren't huge fans of pork chops- but they'll eat it in order to get dessert- which is berries & whip cream tonight! :D
 
Would they eat chili? kids usually like the cornbread that goes with it :D ... or dipping tortilla chips into the chili ... plus they can top w/fun kid stuff like shredded cheese, avocado slices/guac, and sour cream?

What about cold pasta salads and pressed sandwiches? Grilled cheese for picky ones and fresh mozzarella/rstd pepper/eggplant or grilled chicken for the not so picky?

We are having a greek pasta salad and burgers on the grill. Good luck!
 
tacos and spanish rice all done and simmering on stove, so I can nap.
my philosophy...hunger will drive you to try new things..bhahhahhah
 
I haven't figured dinner out yet LOL! I'm leaning towards salad...it's too hot to cook!

That sounds good to me! But they won't eat chili. Nor any of the toppings but cheese! I'll have to make that when I get home!

You would think that. But these kids are a little bit spoiled, and will just sneak bread in the middle of the night. Sigh.

Have no idea for either - lunch is a catered shared meal at the meeting I'm going to for my role as a board member. Dinner is something at a food court, at this stage it should be something like Subway but probably won't be.
 
I made fried eggplant and onion rings for dinner today, something my daughter had been asking for for weeks.
 
We are having my fave quick meal - parmesan chicken. I'm adding sides of buttered rice, whole kernel corn, and green beans.

The chicken is super easy. Cut it up into strips or chunks, your choice. You can make it without cutting it, but I like more breading covering the chicken. LOL Then use one sleeve of Ritz Crackers, 1 C of parmesan cheese (like the Kraft brand) and garlic salt (I don't have a measurement for this, I just am liberal with it LOL). Cook at 350 for 30-40 minutes.

Daniel LOVES this meal and he's so excited. We're going to eat in a few minutes.

What about mapo-style pork with rice? We use this recipe a lot. It's DD's fave, but, instead of bok choy, we use "Asian vegetables" (in quotation marks cuz that's what the bag of frozen veggies says!): I cook the bag according to its instructions and just add right into the pork. Oh, and I cook rice instead of bok choy. I keep it separate from the pork so my DS can happily eat them both in his own picky way lol. Anyway, this is literally DD's fave--she wanted it on her bday, the one day a year she gets full control of the menu lol.

ETA: I made this on Mon. Tonight was pizza and yest. was leftovers...of mapo-style pork rofl.
 
I'm frying up hamburger, spicing it with a Tex-Mex spice, onion, garlic and peppers. Then I will make taco salad for me with avocado, salsa and ranch/sour cream dressing and hubs will have his with beans and rice with salsa and sour cream.
 
@Iowan Costco chicken is so good and easy! The first one we got after we joined, We got home and literally just ate it with our fingers. While I wouldn't just pick at it like that with company lol, the kids enjoyed it!

not to minimise your situation but you are lucky it's only for 2 weeks at this stage :)

last night was spaghetti bolognese with zoodles (zucchini noodles - DD has gone off them (she's my fussy one, i cook them separately anyway so she gets less zucchini, more spaghetti and the rest of us it's about 50/50 with the beef mince sauce) - zucchini is courgette in case you're looking at this going 'huh'

The fussy one usually has something plain potato (mash/roasted) or rice or deconstructed (despite the fact it mixes n her stomach-logic will not prevail on this) or raw (like she'll eat raw carrots but not cooked).

maybe get them to make their own pizzas if you have or can make bases (or just on bread)? (we put everything from broccoli, olives and pineapple (i know this is a polariser!) to leftover tandoori chicken or pasta sauce and stuff on them but from tv, i know that isn't what 'pizza' mean to everyone on the otherside of the world).

Oh! They might like this! Rice and Corn are favorites. And cheese.

You totally lost them at vegetables! :backing The only vegetables they not so grumbling eat is corn and potatoes. Ugh. But I'm totally sending that pork to DH! I want to try it when we get home!
And you made me think of maybe a pulled pork for them? I wonder if they'd eat that....

Oh I know! I'm very blessed that so far my kid only turns up his nose at mushrooms. Which I adore! I mean, he's not perfect, don't get me wrong! If I ask what he wants for dinner it's always pasta. Especially buttered noodles and cheese.

I adore pineapple on pizza! I love pepperoni and pineapple especially!
 
Well, maybe I will eat what I want, and let them eat sandwiches :giggle Thanks for some great ideas for when I get back home and don't have picky eaters! So many of the dishes sound wonderful! Keep them coming!
