Left overs. Some people like them, some people loathe them. Which category do you fall into? I don't mind them at all. Since it's my husband and me only, it's a struggle to always cook just the right amount when following a recipe, so we usually always have leftovers. Working retail I work weird hours so sometimes when i get home at 10pm, I have to eat dinner, and I will grab something we had earlier in the week. Hubby does the same when I am at work and wants to have lunch/dinner.
 
Like you, there is only two of us here as well so we have planned leftovers about half the week otherwise because of my mums schedule we’d be cooking til midnight. Ie: Friday night which is one of my mums days off we made a sausage casserole which we also had on Saturday night. Tonight which is another of her nights off we are having Salmon cakes with vegetables but will be making a chicken stew for the next two nights as well since my mum doesn’t get home til 8.30pm. Even when I’m finally on my own I’ll probably do a meal prep afternoon on the weekend then basically have “leftovers” all week - I don’t want to nor do I have the energy to be cooking every night for 45-60 mins.
 
I absolutely LOVE leftovers. We get lunch the next day or even another dinner later in the week. We are three adults more or less living on one income (even though I nowadays work about 1 day/week). We have lived on one income for about 13 years now ... or is it 14? I'm not sure. Anyway - leftovers are a must.

Leftover veggies is perfect to mix to a soup. Or just make a pasta sauce. And as I said, hubby always can bring lunch to work, and not having to go out and get a way more expensive lunch.

Some foods even taste better the next day. Especially stews that really enhance in flavour.
 
hubby always cooks for 12 or more. I don't think he knows how to cook on a smaller scale. So leftovers are very common. It's helpful on busy days to have a meal ready. But the children can complain if the meal is identical 3 days in a row.
I normally cook for 6 (there are 5 of us) and have the leftovers as my lunch the following day when the children are in school.
 
I used to cook differently when I worked. A few of my recipes are for 4 to 6 servings so I would fix those on Sunday then take the leftovers for lunch. Now that I'm retired, I cook differently so don't have as many leftovers. Once I could eat anything I wanted I found out that the air fryer is my best friend.

So instead of fixing large meals, I tend to buy meat in bulk and package in single serve packages with my Food Saver. Hungry for a pork chop, pull one out of the freezer and plop it in the air fryer.
 
I like left over meatloaf and potato soup - they get better by the day. I always make a lot of potato soup so we can eat it for a few days. I'm not big on much else, but my hubby loves left overs.
 
Cooking for three always leaves something, so I usually eat last night's dinner for today's lunch. My daughter will NOT eat leftovers except pizza.
 
I LOVE leftovers. I eat them most days, by the strictest definition. But really, I often purposely cook enough to put some away for another day. For example, I eat veggie burritos for breakfast. I will sauté a pan full of veggies and eat them for a few days wrapped up with beans or tofu or hummus and other yummy stuff.
 
I wouldn’t say I’m crazy about leftovers, but with just the two of us, we eat a lot of them. I agree that some things, especially soups are often better the next day. Last week I made a chicken casserole which we ended up eating for four days. I think that was a leftover record for us!
 
Huge leftover fan here!! I always make extra so that I have lunch for a day or two :)

Same. It's such a hassle sometimes and then there is cleanup or prep.

My husbands pot of spaghetti sauce lasts days!!! And so much better later.
 
I can't seem to eat the same thing 3 days in a row (exception is breakfast cereal...I can eat that everyday and not grow tired of cereal). If can get creative and make something new out of the old, no problem. But more time than not, I am not that creative with food.

My hubby also cooks like there are 12 of us. Also can't send him to the warehouse store because he will literally buy a 4lb bag of croutons and there are just two of us.
 
I eat leftovers all the time but my hubs isn't big on it. He will eat leftovers once but prefers to have them tweaked a bit i.e. put cheese on it or change the side dishes or something. I can eat leftovers for 2-3 days, it doesn't bother me. Some things taste better the next day.
 
Most of us in my family like leftovers. I love having them because that saves me from cooking a couple nights a week and my kids love them because they can grab something super easy to make themselves for lunches in the summer.
 
I'm okay with leftovers. This morning I had leftover beef rendang (traditional spicy meal) with paratha. It was quick and fulfilling. But hubby isn't really fond of leftovers. He doesn't even like frozen dishes (e.g. meals that are pre-cooked for the whole week and reheated). He likes his meals made fresh while I like having leftovers because it saves me time.
 
I like leftovers. Not only are they good, but they save me from cooking the next night ... or they did when I was cooking. With just my daughter and youngest grandson at home I tend to pickup carry out most nights as they are picky eaters and usually won't eat what I cook.
 
I LOVE leftovers - anything actually that means I don't need to cook. The family though don't relish it on day 3.
Often times the meal just gets better and better though as the flavours meld over time.
 
I don't mind leftovers of most things, but my hubby and Megan (she's the only kid living at home) don't like them much, so I usually end up eating leftovers for my lunch. If there's too many for me to eat before they go bad, I bag them up and pop them in the freezer. If the leftovers are from a weekend when the big kids are visiting I bag them up and send them home with our son and DIL. They're poor college students and love taking any food we'll give them.
