Left Overs | Pad Patter June 10th

We love leftovers around here! I almost always cook enough for us to have leftovers for lunch. Makes meal planning & cooking easier.
 
I cook 4 nights a week, we go out once a week, and the other two nights I work so my husband heats up leftovers for himself and the kids. I plan a couple of things that will reheat well (lasagna, baked potato soup, chicken thighs over rice which can later be served over fresh rice or salad, etc) for the leftover nights. Then two of the things I cook, I don't worry about whether they will reheat well and I make smaller portions.

Our son is picky about leftovers. He's almost 20 and living at home for the summer while he does an engineering internship. He is free to cook his own food if he doesn't like the available leftovers. There will always be a healthy meal available, then anyone who doesn't like what I've prepared is welcomed to take their own initiative with no hard feelings.
 
We love leftovers here! I always make extra food to save myself from more cooking later. Once a week is a planned leftovers night for dinner, and if there are additional leftovers the kids eat them for lunches. Since I'm the only vegetarian in the family, I'll often make myself an alternative dish early in the week then eat it most nights for dinner that week. It's way too much work to cook 2 meals every night, and I don't mind eating the same thing a few days in a row.
