I am not now, nor have I ever been an egg person. With a few exceptions:
(1) Tortilla Espanol: It's like an omelette, but you layer cooked potatoes, and then pour the eggs on top so they fill in the cracks between the layers of potato. You fry it in a cast iron pan for a bit, then put the whole pan in the oven. Delicious, even cold.
(2) Huevos Rancheros: turns out I can deal with eggs when somethered with avocado, salsa, sour cream and beans. Oh, and some tortilla chips for crunch.
(3) Cloud eggs. My husband saw this recipe on his FB feed. (This is also how I found out my husband follows Chatelaine on Facebook. It's like Better Homes & Gardens, but Canadian, and hipper than BHG). It was amazing.
