So my daughter is a baker at a casino. And for awhile, she was doing chocolates for the fine dining restaurant there. She found a "local" chocolate class that she wanted to take to learn more about molding and finishes and stuff, so she signed up. They had a deal, so she signed me up too.
We went last night, and it was so much fun! She ended up sort of being teacher's pet because she had chocolate experience and no one else really did.
It was sheer TORTURE though because we were standing right next to the chocolate tempering machine. There was a ladle in it, and I swear I wanted to just pull an Augustus Gloop and drink it straight out of the machine because it smelled sooooooo good.
I was able to maintain my sense of decorum however.
There was this elderly couple, and every time the husband filled the molds, he'd get chocolate on his hands and lick it off gleefully. They were so cute!
We made dark chocolate shells with a dark chocolate/faintest-hint-of-raspberry ganache filling. We learned some cool techniques and some airbrushing and different things. Some of them came out so pretty. (I'll have to post a pic later.) Even though I didn't get to do what I wanted to do, it was still fun.
It was hard because the class was unexpectedly full. He usually only has 4-5 people, but last night's class somehow had 13 and some of the people were late so we didn't get started on time. There really wasn't enough room or time to try things. And about 1/3 of the people were obnoxious and would just take things away from you, hog limited supplies, or not care about anyone else so it made it difficult for everyone. Like I had a scallop mold at my spot, and then I went to grab a transfer sheet, came back, and one of the people had taken my spot and my mold, and she just didn't care. Then there was a crazy lady and a crazy guy who dominated the majority of the instruction time asking really ridiculous questions that didn't even make sense. Then nearing the end of class, there wasn't a lot of ganache and things were getting late, so the instructor said we could fill about 15 chocolates per person, but the obnoxious woman did about three times that amount, so this 11-year old girl who was getting the class as a b-day gift from her aunt didn't have ganache to fill hers. Like really people? Ugh. The instructor was really nice though and quickly made up a little more so the little girl could finish.
Now I want to make a bunch of chocolates at home! And it totally made me miss the cake classes we took one year at Michael's.
What about you? Have you ever taken a chocolate/candy/cooking/baking class? What did you learn? Do you put those things into practice?
