I'm a stuffed zucchini type of cook.
I love zucchini because they're way cheap (when in season) and they don't have a very out-there taste: they go with basically everything. I also like that it easy to make and it's a lot of vegetable.
There are a LOT of different recipes on Pinterest, I've tried several, but I mostly like these:
Stuffed zucchini with smoked salmon and goat cheese.
Basically just cut the zucchini in halve. Place in oven dish.
Spoon out the seeds, cut in cubes and save. Cut smoked salmon in cubes. Cut cherry tomatoes into halves. Cut up a red bell peper into cubes. Break up soft goat cheese into pieces. Dice up an onion. Add some pine tree nuts.
Mix all the ingredients with Italian herbs and fill up the zucchini halves. I always have more filling, so I just add the rest of the filling aside the zucchini in the dish.
Bake in the oven for 20 minutes on 200 degrees Celcius.
Stuffed zucchini with tomatoes and ground beef
Cut the zucchini in halves and spoon out the seeds.
Brown the beef with a diced onion and garlic. Cut cherry tomatoes in halves. Mix the beef and tomatoes and fill the zucchini halves. Place in an oven dish, sprinkle with cheese, and bake in the oven for about 15 minutes on 200 degrees Celcius.
I also like to stuff halves of sweet palermo (I have no idea about the English translation, so look at the picture) with a mixture of cooked quinoa, feta cheese and herbes. Also I place these in an oven dish and cook for about 15 minutes on 200 degrees Celsius.
