I see that today is a day for celebrating cheese, so what's your favorite?

I do try to limit my intake since I only will buy the full fat variety. But, My current favorite is Currently, a bit of soft goat cheese, spreads nicely on crackers, wonderful on a salad, pairs great with strawberries.
 
I'm a vegan, so traditional cheese is out for me! It used to be one of my favorite foods though, so I'm always trying to create yummy substitutes. The vegan cheeses on the market just aren't up to par for the most part. There is one brand that tastes SO good, called Rebel Cheese, but it is super expensive and I just can't!

My fave used to be brie!

Brie goes nice with some crackers or french bread and strawberries too -- I'm sure but it might be a bit fattier than the goat cheese. I like the soft, rich tanginess of brie too -- haven't had that one in a long time. I've heard of using nutritional yeast as a vegan sub for parmesan (I guess), but I've never tried it.
 
I love all kinds of cheese! For snacking/ eating with crackers or fruit, my favs are cheddar and Brie.

I also love melted cheese in casseroles and Italian and Mexican dishes
 
Another vegan here. Hi @kelley :wave I haven't had dairy since 2008 because of lactose intolerance and I've kind of forgotten what it tastes like. But I get the fatty creaminess of dairy from a few sources. I love cashew cream, which can be made savory or sweet, and make it often. I love avocados. I don't have a lot of commercial vegan cheese substitutes but I like the Chao brand slices, Violife and Follow Your Heart shreds, and Treeline brand sour cream.

But the BEST vegan cheese I ever had was at a restaurant in Charlottesville a couple years ago. It was nut-based and hand crafted and contained herbs. Unfortunately, it was made by a person who stopped running her business to have a baby or something so I only got it two times. Someday I'll find its likeness again; maybe even make it myself.
 
I am a cheese lover but my favourite is blue cheese. I love it crumbled on a steak or in roasted pumpkin/spinach salad. I eat cheese most days either on food or as a snack. Another fav is crumbled feta on fried eggs or avocado or baked beans.

Yes, me too, but avoiding adding as much as I want since I’m watching my saturated fats from dairy.

I do enjoy blue cheese, in a salad or yes on steak! Can’t remember the last time I had it.
 
I absolutely LOVE cheese. Mmmmmm.... Any. Any is my favorite, lol!

I love cheese but mostly not too strong taste cheese like Brie or Camembert. I am a mozzarella addict on pizza and pasta too. I should try to limit too but it's just too hard :giggle

But goat and blue cheese are a no no, sorry :giggle

I love cheese, but my problem is I want it with crackers and I really need to eat low carb. I do occasionally eat cheese alone, just some local Tillamook white cheddar or colby jack. Nothing fancy!
 
All the cheese? I am fortunate to have a actual cheese shop within 30 minutes of my home. A few times a year, hubby and i drive out there and try a bunch of cheese and spend a bit of money on all the one's we love. I tend to like spicy cheeses, hubby like more safe cheeses like cheddar or gouda. If you like spicy I highly recommend these cheeses:
Beemster Green Hatch Chili
Vermont Maple Siracha Cheddar
Rattle Snake
Caribbean Blazer
My favorite cheese is Old Witch, her less aged sister is the Red Witch.

generally, I wouldn't go for the spicy ones -- but ages ago there was a wine & cheese shop my husband and I went to. We almost always got the sampler cheese board and picked out a wine from their stock. The shop closed many years ago, the owners retired. That was another lifetime and another city -- but it was a little treasure in my college town.
 
Being lactose intolerant I really only buy Edam cheese at the grocery store.....I do go through a fair bit though.
 
I love lots of different cheeses. I have jalapeno jack on my burgers, sharp cheddar in my broccoli casserole, and tex mex mix on my tacos. Yum!
