Host a Summer picnic!!
3 cheers for summer!! I planned a fun picnic for some girls in my tribe!(I’m in the apricot dress center bottom of pic) It was such a fun day and although there are plenty of fun activities to enjoy in the summer, having a picnic with my girls was such a different twist. Maybe you will take your own tribe out – and if so, I’m including some great picnic munching ideas! All of these can be made ahead of time, so you can enjoy the picnic along with everyone else! And yes, you can still make these dishes even if you’re just dining out on your porch or patio. They’re just too good not to try again!
-Pick up several servings of fried chicken from your local deli or grocery store. You can get the day before & place in tupperware. I love cold friend chicken at a pic nic!
-brownies (make ahead)
-potato salad (maybe you have a great recipe for this, but I just grab some at the deli when I get the chicken)
-I bring a large thermos (think football team lol) of lemonade. *recipe below
-Watermelon, tomato and feta salad *recipe below

Old-School Lemonade
INGREDIENTS
1 1/2 c. sugar
1 1/2 c. fresh lemon juice (from about 10 lemons), plus 2 lemons, sliced
Berries and fresh mint sprigs, for serving
DIRECTIONS
In a small saucepan, combine sugar and 1 1/2 cups water; bring to a boil. Reduce heat and simmer until the sugar dissolves, 3 to 4 minutes. Remove from heat and cool completely. In a large pitcher, combine lemon juice, 1 1/2 cups sugar syrup, and 4 cups cold water (add remaining sugar syrup to adjust sweetness, if desired). Refrigerate until chilled.
Watermelon, Tomato, and Feta Salad
INGREDIENTS
1 small watermelon (about 3 lb.)
1/2 c. fresh mint
1/4 c. red onion, thinly sliced
12 oz. cherry or grape tomatoes, halved
2 tbsp. olive oil
2 tbsp. fresh lime juice
1 tsp. honey
Kosher salt and black pepper
Crumbled feta
DIRECTIONS
Remove the rind from watermelon and cut melon into 1 1/2-inch-thick pieces; arrange on a platter. Top with fresh mint, red onion, cherry or grape tomatoes. Combine olive oil, fresh lime juice, pure honey, and kosher salt and black pepper in a bowl. Spoon over watermelon; top with crumbled feta.
