Not your average cookie

Just so you know, this isn’t your average recipe post. It’s a little more – – extra, shall we say.

Rewind to January, 2017. I posted a photo on Facebook of my flat and pitiful chocolate chip cookie and said, this cookie represented my 2017 and I hoped that my 2018 would yield a better year and cookie. Deep, I know.

That tugged at the heart of my friend who knew our family’s struggles at the time and she also happened to own a bakery. So guess what I got? A killer recipe for chocolate chip cookies – and ya know what y’all? My 2018 was a good year! lol

This recipe produces a perfect cookie – every time. It has yet to fail me.

So when our church’s women’s group announced we would be making meals for 20 foster care families, I jumped to help. My home was assigned to make 20 (TWENTY!) dozen cookies. We made them, packaged them in sturdy containers and then froze them. On Saturday, these cookies will be added to the meals that other groups prepared and we will deliver to the families 🙂

So, without further delay, I will give you this life changing recipe. My only hope, is maybe you will do something ‘extra’ with it.

Uncle Nik’s Chocolate Chip Cookies
(I have no idea if there is truly an Uncle Nic out there, just saying)

4  1/4 cups all purpose flour
1/2 tsp baking powder
1  1/2 tsp baking soda
1 tsp salt
1  1/2 c softened butter (3 sticks)
1 c sugar
1  1/2 c firmly packed brown sugar
2 eggs
1 Tbs vanilla
1 12 oz semi sweet chocolate chips (or chocolate chunks)

Heat oven to 375. Combine flour, baking powder, baking soda and salt in a bowl and set aside. Combine butter, sugar and brown sugar in another bowl. Beat at medium speed & add in eggs and vanilla. After mixing well, add in flour mixture. Stir in chocolate. Roll dough in balls and place on greased foiled cookie sheet. Bake about 15 minutes.
