Turkey Leftovers
So many of my holiday memories revolve around food, where we ate, what we ate and when. Some of my fondest memories of Christmas are of our family dinners and sometimes, even better, the turkey leftovers. More than anything, my favorite use for leftover turkey is a sandwich. There is nothing better, in my opinion, than turkey leftovers on fresh, soft, squishy white bread slathered with butter and mayo, and sprinkled with salt & pepper; simple but oh so yummy! My next fave sandwich would be a ciabatta bun with the above mentioned ingredients, but add in some pesto, tomatoes, sprouts and bacon. Are you getting hungry yet?
I’ve taken photos over the years of our Christmas breakfast and dinner but I’ve never taken a photo of the leftovers or scrapped about them. This year I will. I wish I had done this years ago because I’m certain that my fave leftover meals were different back then and it would be fun to see how preferences changed over the years. Another meal I enjoy with turkey leftovers is turkey and rice soup, which is surprisingly easy to make, just requiring a bit of time to cook down the turkey carcass, strain and then adding the veggies, chopped turkey and rice. I like to add a bit of smoked paprika to mine.
