Oh my gosh!! SOOOOOOO easy peasy@
Take a 9 x 13 baking pan and spray with cooking oil.
Dump in one 14 oz can of lemon pie filling and spread evenly
Dump in one 20 oz can of crushed pineapple (DO NOT DRAIN) and spread over the lemon.
Dump in one box of lemon cake mix (I didn't have lemon, the yellow cake mix did fine) Spread evenly all over the lemon, pineapple.
Now take 1 and 1/2 sticks of butter and cut them into thin pieces, the thinner the better because you will have more to cover the cake with. Lay the pieces on top of the cake mix, covering as much of the mix as possible.
DO NOT MIX ANYTHING. Just leave in layers the way you put them in the pan.
Pop into a 350 degree oven for 50 minutes or until toothpick comes out clean.

Want a lemon, blueberry dump cake? Change out the crushed pineapple for a can of blueberry pie filling.
I have a cookbook with nothing but dump cakes in it.

I have no clue. Have any ideas for me? It just has to be without gluten, dairy, soy, nuts, eggs & meat. Fish is ok.

(See why I haven't a clue? It's so difficult to figure out meals that I sometimes just skip it.)

Mexican chicken in the Instant Pot is our family favorite!! And we typically do pizza on Fridays also. :)

Tonight we did our own mini pizzas. First, I made a spicy marinara meat sauce with 1/2 ground beef, 1/2 Italian sausage. Then we layered pepperoni, the meat sauce, and mozzarella on top of English muffins and baked. Easy and yummy!

Next up - red wine, dark chocolate and scrapping! :happydance2

Last night we went to Wendy's. Tonight we will have "one pot pasta" which is a recipe I learned at Pinner's Conference from Slow Roasted Italian blog. We loved it, and it's been a regular since.

In November, I did a meal prep class, and ended up making an 8 week meal plan that we rotate, so now I don't ask what's for dinner. Haha!

After the one pot pasta tonight, we'll be having chicken chili tacos tomorrow.

Stuffed Acorn Squash and a spring mix side salad ... I've been putting off making this all week (in favor of making easier dishes) so I have to get this baked tonight!

That's what we had. I made meatballs and put them in the slow cooker in the morning.

I'm afraid, with 7 kids, I'll never know how to cook small...and I often make even more than we need because we do eat a lot of leftovers for lunch over here.
