    Porcupine Meatballs - yummy - everyone loves them - make double and freeze half for later!
    Ingredients
    • 1/2 cup uncooked long grain rice
    • 1/2 cup water
    • 1/3 cup chopped onion
    • 1 teaspoon salt
    • 1/2 teaspoon celery salt
    • 1/8 teaspoon pepper
    • 1/8 teaspoon garlic powder
    • 1 pound ground beef
    • 2 tablespoons canola oil
    • 1 can (15 ounces) tomato sauce
    • 1 cup water
    • 2 tablespoons brown sugar
    • 2 teaspoons Worcestershire sauce
    • In a bowl, combine the first seven ingredients. Add beef and mix well. Shape into 1-1/2-in. balls. In a large skillet, brown meatballs in oil; drain. Combine tomato sauce, water, brown sugar and Worcestershire sauce; pour over meatballs. Reduce heat; cover and simmer for 1 hour.

    Please tell me about this as while I don't have an air fryer, my friend does. Do you do canned chick peas or the dried ones? I myself cook dried ones for homemade hummus but somehow didn't this at all this year - so far. What happened to me???

    I use canned.... drain them... throw lightly season (I like jerk seasoning..kids like Italian seasoning and parmasan) ... and throw in air fryer till crispy.. like 15 mins ..tossing half way through
    Very cheap and easy snack

    My recent favorite - meaning I make it for dh - and on occasion eat it myself is one called Chicken McNicken.

    2 c chicken
    1 box cornbread stuffing
    1 16 oz bag if frozen chopped broccoli defrosted or fresh cut to your own size.

    A layer of cooked (boxed is great) stuffing, a layer of cooked broccoli and then a top of chunks of precooked chopped or shredded chicken/turkey (stuff you cooked or chicken from a store rotisserie chicken). Repeat until all three ingredients are done. I added a good jar or your own chicken or mushroom gravy mixed into the chicken. Top with parmesan cheese and heat covered at 400° for about 30+ minutes OR in a microwave at whatever you'd do for a large casserole. Suggested additions for serving area canned cranberry relish and any kind of yam/sweet potato you like. He just eats it as it is... :clap

    They say this serves 4 and it did make more than 4 servings for my dh.

    I'd never had chile mac til I married 'the current husband' and this was a variation we both really liked. I'm usually ad hoc with chilemac and I did add a lot more seasoning - a tbs of New Mexico hatch chile powder and a tsp of chimayo red chile powder. Maybe more. I did make their recipe for chile powder and I liked it enough to plan on making a big batch. I didn't add the cheese at the end as we were eating it at different times that night so I just topped each serving with the grated cheese and microwaved it until melted. btw, while it seems like a small amount it made 4-5 servings AND a big square container of extra for the freezer. Now if you have boys/men I'd say this is probably a one meal recipe.

    My mom had something similar to this. I don't like rice so would always pick it out so she started making it without the rice!

    But I loved the Veg-All Mixed Vegetable Casserole she made. I still make it.

    1 lb ground chuck or ground beef
    1 tsp instant onion
    1/4 tsp salt
    1/8 tsp pepper
    16oz can Veg-All, drained
    10.5 oz can tomato soup
    4 oz can mushrooms (I leave these out)
    Brown ground beef & onion. Drain and add seasonings. Stir in Veg-All, tomato soup & mushrooms.
    Pour into 1/2 qt casserole.
    Bake at 400 degrees for 15 minutes.
    Serve over refrigerated biscuits (I used Pillsbury Flaky Layer Biscuits.)

    This was the perfect size meal for our family of 3. As a single person, I could get 2 meals out of it. I usually buy the 10 ct package of biscuits so would eat one of them with butter as well as the mixture on top some.

    Last night he had Shepherds Pie with ground beef & a bag of frozen mixed vegetables (thawed). I also added a packet of brown gravy doctored with Worcestershire sauce and some Penzys English Prime Rib Rub seasoning https://www.penzeys.com/online-catalog/english-prime-rib-rub/c-24/p-381/pd-s

    Topped it all with a thick layer of home made skin on mashed potatoes with a good dose of garlic powder. I usually add two cloves of garlic when making mashed potatoes. Top that with grated cheddar and bake 30 min at 350°

    I haven't made this since last fall and he swooned. Sometimes he's worth it! :lmao
