2- Slice a butternut squash in half,

This is the part easier said than done! The woman who collects my newspapers (for her hamsters, gerbils or whatever) gave me three butternut squash. I find them almost impossible to cut and usually just give them a stint in the microwave before trying a cut. fwiw I do have good, really sharp knives too.

Am I alone in finding these buggers dangerously un cuttable?
 
@cookingmylife I have heard about the microwave trick. I cut enough off the bottom that it sits flat and then cut. Also, if the knife isn't sliding in, I pull it out and sharpen it before giving it another go.
 
These days there are only a few soups I will make, as some of my old faves don't fit into my keto diet.

I've enjoyed this one. I just don't put the corn in and add in hot sauce.

I've made homemade tomato soup which is so much better than the store bought soup but more time consuming (buying lots of tomatoes and roasting them). I am interested in this version which uses canned tomatoes and a few other ingredients. I'll be making this soon too.

BTW - I made the white chicken chili and just kept it in the cooler until 2 hours before "dinner time" at the election voting place. So I just did a re-heat in the crock-pot and it worked out really well.
 
Yum! LOVE soup! I had this at my bible study group this week! It was so good! Only thing she did different is use half beef to turkey. I will most likely do all ground chicken (for my hubby's heart health) And she didn't add the noodles which I didn't miss at all!

We use this for our Chili, it is really good! Spicy! So use less of the season packet if you don't want it so 'hot' This is also one that I've used ground chicken for and you really don't notice.

I buy whole chicken breasts and grind them with my kitchen aid grinder.

My hubby makes a veggie/beef soup that has cabbage+ in it. Not sure on the recipe. It was his mothers and he has it in his head. He is the one to always make that one.
 
@Juliestcyr Thanks so much for that video. I also sent it to the friend to whom I gave one of my three squash. She didn't know what it was! and she's my age!

@Sokee I keep meaning to grind up some chicken breasts. Maybe a Costco run this weekend and I can get the grinder bit out. I have one for my KA and I forget to use it or think it's too hard to clean....pure laziness.
