The temperature has dropped and I'm thinking it's soup weather today. I'm not sure which one I want for dinner but I definitely want soup today! Some of our FAVS are chicken tortilla, zuppa toscana, chicken noodle, and cheddar broccoli.

How about you? Is it soup weather where you live and what are your favorite soups? Bonus if you share your recipe.
 
I like to use country pasta egg noodles for my chicken noodle soup and just add cooked chicken and broth and black pepper to season.

The Bear Creek soup packages are really good, so I usually used those for the cheddar broccoli and their creamy potato is good too.

Google has lots of Olive Garden copy cat recipes for Zuppa Toscana. My hubby loves it, and usually makes that for us. And attached is the chicken tortilla soup recipe that I got from my friend, Shirley. It's so easy and oh so yummy. We like to get the Macayo Enchilada sauce that comes in the pink and yellow can.

Definitely soup weather! Hubby made Cream of Asparagus soup from scratch last night (Hard to locate "scratch" in the grocery, I must say.. HA HA) and it is one of my favorites! We do soup once a week on Thursdays even in the summer, but for some reason on a cold day soup is always perfect. Chilli is als good :) I love the fall!

PS re the recipe, it is hubby's secret.. I just know he uses 2 bunches of asparagus.. white or green, chicken broth, leeks, shallots, and cream.. I don't know portions or anything.. I just know what we buy.. he keeps it all under lock and key! I just know it is yum!! :)
 
This week is warming up, despite a really chilly weekend. But soup, yes I love it and in fact that's the plan for tonight's meal ... probably a Tuscan White Bean or Crockpot Detox Lentil paired with a side salad. I love the way it fills the house with yummy smells while it simmers for hours. YUM!

I'm also hoping to make a veggie pot pie some point this week or maybe the weekend.
 
Great timing on the post. I need a soup suggestion that will sit on warm in the crock pot for 12 hours or so and still be good. Or one I can freeze and thaw in the crock pot for 6+ hours. I am working our election polling place and we are not allowed to leave the building, so people eat when they can. I have to be there from 5:30am to 8pm and do not have access to a kitchen, fridge, etc. But I can bring a crock pot and a cooler. I am thinking noodles would get too mushy sitting that long.

Any ideas? Last time, I made a big pot of sloppy joes, but I am thinking soup this time around.
 
Definitely soup weather here. My family loves potato soup and chicken noodle. I do a really easy potato soup using Cream of Mushroom, chicken broth, a little milk, a little butter, some real bacon bits, and of course potatoes...then cheese to sprinkle on top. I don't really measure anything lol.
 
Potato and leek soup is a BIG favourite in our house, as is good old pumpkin soup. Both work well in the slow cooker, which is a bonus.

oh Bev I forgot about my famous taco soup. It'd be good in a crockpot all day. Let me go take a photo of my recipe and I'll post it here for you. It's easy and yummy! brb

Chili. It always gets better with longer cooking time.
Noodles or rice would get mushy, unless you can toss them in later? Like if you could plug in the soup at 5:30am, but then add noodles/rice around 11 or 12? that might work? My aunt would make chicken noodle soup that way. She'd simmer everything but the noodles at grandmas, then add in the noodles about 15 minutes before we ate.

Corn chowder is one that we do with a long simmer time.
 
@BevG I can't find the Taco Soup Recipe but I know it from the top of my head so I'll just type it for ya.... hehe It works really well in the crockpot as it can simmer and meld the flavors all day. Great warmed up in the microwave as left overs too. I've even used frozen taco meat in the recipe when I'm throwing it all in the crockpot. I still add a taco seasoning envelope because we like lots of taco flavor. Sometimes I even brown my hamburger in the crockpot on high for an hour or so and then add the remaining ingredients. I just go stir and chop up the meat a couple of times. It's a good recipe and very forgiving. If you like more meat add it. If you like it more soupy, add more water and maybe another taco seasoning packet and/or can of tomato soup. If you don't like beans as much, only add one can. It's really is forgiving and oh so yummy.

Kayla's Taco Soup
1 lb hamburger - browned
2 cans (15 ounces) whole corn - don't drain, use with liquid
2 cans (14.5 ounces) diced tomatoes (can have chilies if desired)
2 cans (15 ounces) kidney beans - rinsed and drained
1 envelope taco seasoning
1 (10 ounce) can of tomato soup
1 cup of water or use the soup can

toppings:
Doritos - you can use regular tortilla chips, but the Nacho Doritos are the best with taco soup... YUM!
grated cheddar cheese

Brown meat and drain off excess grease. While meat is browning heat all other ingredients (except toppings) in a big pot. Add browned hamburger and simmer stirring occasionally until everything is heated well. Serve in a bowl over crumbled Doritos and top with cheese.

I usually put it in the crockpot and just let it cook on low for 4-6 hours so the flavors meld and develop. You can keep it on warm too for quite a while... it's really yummy! Hope you enjoy it!

We like thick soups, like split pea. We also like this recipe for beef stew. This peachy-keen black bean soup is really easy as well. A total cheater crockpot soup is the roasted red pepper soup from Trader Joe's with a can of drained black beans and a bag of frozen corn... sprinkle some crumbled goat cheese on top and you have dinner (a friend of mine sometimes adds sliced, precooked sausage to hers as well).

Yep, Vegas would be too hot for soup. I could eat soup year round, and I do when I go to Olive Garden. But my hubby won't. It has to be cool for him to want soup.
 
My favorite is unstuffed golumpki soup!! I cook mine in the Instant Pot

3 lbs of ground beef (I prefer to use half beef and half ground pork, but the pork is hard to find)
1/2 - 3/4 large head of cabbage (chopped)
1 onion
6 cloves of garlic (you can cut back on this, but I LOVE garlic LOL)
8 oz tomato sauce
32 oz of beef broth
2 tbsp of worestershire sauce
2 tbsp of garlic powder
2 tbsp of onion powder
1.5 tsp of oregano
1.5 tsp thyme
1.5 tsp of cayenne pepper
each person can add salt and pepper to their liking

Turn the pressure cooker on to the “brown” method.
Add 1 tbsp oil and the onions. Sauté about 3 minutes and add the garlic.
Then add in the ground pork and beef; brown. Once browned, drain the fat off the meat and put back into the pressure cooker. Add the rest of the ingredients and stir; cook on manual for 15 mins and I just do natural release on the pressure.

**Because it's meant to be a low carb/keto friendly soup I omit the rice
