Yesterday I made Creamy chicken cauliflower soup 800 g cauliflower, broken into florets (approx. 3 cm) 600 g water 40 - 60 g Chicken stock paste ½ tsp ground black pepper 800 g chicken breast (boiled) taco seasoning (optional) Add the water and cauliflower to the cooking pot with the chicken stock and season with pepper. Boil the cauliflower until tender and mix ... add seasoning if necessary ... Pull the chicken into threads Divide soup between serving bowls and serve topped with the chicken. Optional - sprinkle some taco seasoning on top to make it spicy

I LOVE soup weather and I love eating soup, but unfortunately my family doesn't love eating soup very often, so I have to be careful I don't make too much. Lol. I love chili and I also make an amazing chicken and dumpling soup too. I probably love soups too because it always makes leftovers and I selfishly hope that I can get away with not cooking for a dinner occasionally.
I love the not cooking part and wish my family would love leftovers more. My hubby said I made too much taco soup the other night, but I said that's lunch and dinner for tomorrow. He and the girls rolled their eyes and said no thanks! I didn't care though because I didn't make that much extra. It was my lunch yesterday and it'll be my lunch today too. Hubby and the girls also don't like soup or really the same type of thing two days in a row, so I can't make soup again until the weekend, even though it's soup weather. I think it's their turn to come up with something for dinner, and they can cook it!
