Thanks to this thread, I've spent the last hour or so on Pinterest looking at soup. :p

These are the ones I think I'll be trying once the temps don't reach 90 anymore.

we do soup sundays around here. i keep telling dh i can feel them coming! i'm bookmarking this thread for later!
 
Carolee, the Skinny Chicken Tortilla soup I posted was AMAZING. I ate it for dinner Mondays, leftovers for lunch yesterday (Tuesday) and I'm bringing leftovers again today! And when you bake the corn tortilla strips you need to sprinkle them with taco seasoning...it makes a world of difference. We just quickly made our own taco seasoning mixture since I didn't have any on hand.
 
I'm not a big soup person but I'm definitely going to be checking out the taco/tortilla/enchilada soup recipes. Those are my faves!

I'm sold! I'm going to grab the ingredients for this next time I grocery shop. It is really starting to get cold here!

I also make split pea, chicken noodle, tortellini, and beef barley along with chili and stew. I'm going to try to add more soups to our month this fall/winter.
 
I made the skinny taste chicken enchilada soup. My whole family loved it! Thanks for the recommendation!
 
I made this tonight...it looks very similar to Becky's recipe.

Crock Pot Cream Cheese Chicken Chili

2 chicken breasts
1 can Rotel tomatoes
1 can corn kernels, do not drain
1 can black beans, drained and rinsed
1 pkg. Ranch dressing mix
1 T cumin
1 t chili powder
1 t onion powder
1 8-oz pkg. cream cheese

Put the chicken in the crock pot.
Top with the tomatoes, corn, drained and rinsed beans,
ranch dressing, cumin, onion and chili powders,
stir to combine then top with the cream cheese.
Cook on low for 6-8 hours, stirring one or twice
to blend in the cheese.
Shred the chicken into large pieces
and serve over rice.
Serves 4

I doubled this not knowing if Eric (my son...it's his birthday) would be having friends over or not. He ended up being gone, so we'll have this again tomorrow while the guys are watching football! My dh and one son that was home both said it was DELISH!! Thumbs up from them!

I have to just add...I am NOT a crock pot fan. I've rarely made anything that actually tasted good. I was so pleasantly surprised this turned out as well as it did...and soooo easy!
