Looking for my Corn Chowder recipe, but in the meantime... Oh wait. I just realized this is it. I just add frozen sweet corn. I use Rotisserie chicken instead of bothering to cook one.

Cheesy Chicken Chowdah

*This could only be improved by the addition of crispy bacon and/or roasted corn

2 boneless, skinless chicken breasts, cubed
1 tablespoon olive oil
1 teaspoon Kosher salt (or 3/4 tsp regular salt)
1 medium onion, chopped fine
2 carrots, chopped fine
3 celery stalks, chopped fine with the greens included
2-3 large potatoes, washed, peeled, and cubed
1 quart (4 cups) chicken stock
1/4 cup butter (or oil if you prefer, although we all know butter tastes awesome)
1/3 cup flour
2 cups milk
2 cups (8oz) shredded cheddar cheese

Place a large pot over medium-high heat and add oil. When it's good and hot, add the chicken, season with salt, and cook, stirring occasionally, until it is no longer pink. Add the onion, carrot, and celery and cook over medium heat until the vegetables have softened and have some color on them--about 10 minutes over medium heat. Add the potatoes and the chicken stock. Don't worry if the vegetables aren't fully covered. The vegetables will continue to cook down. Bring to a boil and then reduce heat to medium-low and cook for about about 15 minutes, until potatoes are fork tender.

While the base is cooking, melt butter in a separate sauce pan over medium heat. Add flour and whisk well for about 3-4 minutes. Slowly whisk in milk (to prevent lumps) and cook, stirring frequently, until the mixture thickens, about 3 minutes. Remove pot from heat and stir in the cheese one handful at a time (waiting until the first handful is melted before adding the next will prevent the cheese from separating or the sauce from becoming grainy). The mixture will be thick.

Once the potatoes are done, remove the pot from the heat and stir in the cheese mixture. Season to taste. Serve.

Speedy Shrimp & Sausage Paella


Ingredients:
1 medium onion
8 oz (250 g) smoked Polish sausage
1 tbsp (15 mL) olive oil
1 can (14.5 oz) chicken broth (about 2 cups/500 mL)
1 cup (250 mL) uncooked long grain white rice
1 tbsp (15 mL) Creole Rub
2 garlic cloves, pressed
1/2 tsp (2 mL) turmeric
1 lb (450 g) medium uncooked shrimp (41-50 per pound), peeled and deveined, tails removed
1 can (14.5 ounces) petite diced tomatoes with green chiles (1 3/4 cups/425 mL), drained
1 pkg (9 oz) frozen artichoke hearts, thawed (1 1/2 cups/375 mL)
1 cup (250 mL) frozen peas, thawed
Chopped fresh parsley (optional)


Directions:
Chop onion using Food Chopper. Cut sausage crosswise into 1/4-inch-thick (6-mm) slices. Combine onion, sausage and oil in Deep Covered Baker. Microwave, covered, on HIGH 2-3 minutes or until onion is tender. Add broth, rice, rub, garlic pressed with Garlic Press and turmeric to baker; mix well. Microwave, covered, on HIGH 16-20 minutes or until rice is tender, stirring every 5 minutes.
Carefully remove baker from microwave using Oven Mitts. Add shrimp, tomatoes, artichokes and peas to baker; mix well. Microwave, covered, on HIGH 3-5 minutes or until shrimp are opaque. Let stand, covered, 5 minutes. Garnish with chopped parsley, if desired.
Yield: 6 servings

I also like to make things like Thai curry dishes over rice. I always use two cans of coconut milk so it's really soupy...lots of veggies and chicken, and I always tend to make it on the spicy side so it warms my insides!!
 
I love fall and winter so that I can make soups too!

I am definitely going to be checking some of these out.

One of our easy favorites is Taco Soup in the crock pot:
1lb ground beef browned with some onion
1 can kidney beans
1 can corn
1 can tomatoes
1 can Rotel Tomatoes
1 can black beans
1 pkg Ranch seasoning
1 pkg taco seasoning
Let simmer for a couple of hours or all day, serve with shredded cheese, sour cream, tortilla chips.
It is so easy and always seems to be a hit. I substitute different beans in and out too, depending on what I have in my cabinets.

We also love this Black Bean soup recipe that I posted on my blog back several months ago.
 
I'm loving this thread. I'm going to print a bunch of these out to try. :) Here's my super easy potato soup and it's super healthy. Before Weight Watchers changed their points system, it was 1 point for 1 cup and is very filling!

1 bag frozen Potatoes Obrien
2 cans chicken broth
1 package peppered white gravy mix (any brand)

Put in pot, bring to boil and simmer for about 10 minutes. LOVE this one! :)

7 cups of water + 7 tsp beef boullion (aka 7 cups of beef broth)
1/2 lb ground sausage, cooked & drained
14.5 oz can diced tomatoes with green chilies
1 cup matchstick carrots
1 cup fresh baby spinach, washed & cut
1 package refrigerated whole wheat cheese tortellini
1 tsp garlic powder (or fresh garlic browned in with the sausage if you have it)
1/2 tsp dried basil
generous dash of pepper

Instructions:
1. cook sausage, drain
2. bring beef broth to a boil
3. add carrots & seasoning, stir to combine
4. add tortellini, boil ~ 3 minutes
5. reduce heat, add sausage & spinach; cook on low until spinach is softened & soup is heated through

* A bit of olive oil * About 1/4 of a sweet onion, chopped * 6-ish cups of chicken broth * fresh baby spinach, washed and chopped * matchstick carrots - about a handful * 9 oz refrigerated package of cheese tortellini * some pepper * garlic powder (not sure how much - 1tsp +) * basil (again, not really sure how much... maybe about a tsp as well) * maybe some sea salt if you need a bit of extra seasoning



Add the olive oil to the bottom of a big soup pot & saute the onion for a few minutes

Then add the chicken broth, spinach, carrots and seasoning and bring to a boil

Once it's boiling, add the tortellini and boil until pasta is tender
 
Ooh ya we love taco soup, too.

And chili. I'm always trying new chili recipes, but I end up falling back to buying this stuff:

I add lots of onions and peppers and beans, I like it super chunky. :)
