okay I just got home from Sam's Club and boned out my rotisserie chicken. I love their rotisserie chicken and better yet my family loves them too. There are so many things you can do with the chicken to have a quick inexpensive meal. Most of the time we just have it on a roll as a chicken sandwich. If there's any leftover, I usually cut it up and freeze it to use later. It's great for chicken noodle soup, chicken quesadillas, haystacks, or to adding to a casserole.

How about you... do you buy rotisserie chickens? And if you do, how do you use them?
 
I buy one almost every week! Love the convenience, and they're inexpensive. We usually eat most of it straight off the bones first, and then in sandwiches. Occasionally I get two and have enough leftover to make a recipe.
 
I also buy to eat that day -- normally I buy a rotisserie turkey breast since we don't like dark meat either.

Where do you get a rotisserie turkey breast? I'm not a big fan of the dark meat, but hubby likes it and my little dd will eat it on the leg.

I love them as a quick dinner! However, we're not fans of the dark meat, so we'll eat the breast meat for dinner, and then I cut up all the dark stuff for the dogs to have with their dinners over the next week or so. Yeah, spoiled :)

Yep - those dogs are spoiled... hehe but they might as well eat it if you're not going too. ;) I used to save my nice bones for the dog next door. She was such a nice, well trained golden retriever. I was sad when they moved. The new people haven't trained their dogs and they bark all the day while they're at work and it drives me crazy.
 
love love love them...and our local grocery store marks them half off in the evening before closing. I will buy them all! I bone them, then boil the carcass, and make chicken soup (with lasagna noodles) heaven! I toss in a bag of mixed vegis and celery seed for seasoning and the aroma is beyond wonderful! I freeze bags of them for convenient meals later!
I also use them for chicken enchiladas, sandwiches, tacos, casseroles and more! I love how moist they are also!

Never thought of using lasagna noodles for chicken soup, but that sounds yummy! I forgot about boiling the carcass. I've done it a few times in the past and made soup, or broth for gravy and mashed potatoes. The chicken enchiladas sound good too. It's been ages since I've made those. I need to add those to my list. They freeze up well and would be good for the fam to pull out of the freezer during MOC.
 
The first time we got one from Costco, we didn't even "make" a meal: all 4 of us just ate the meat right off the bones. It was ridiculous but I won't apologize lol!
Now that we've settled down lol, we like to use the chicken in Cesar salad wraps, or just on top of pasta (that's how the kids like it). DH has also used it in homemade chicken noodle soup.

hehe... most of the time I'm trying to take it off the bones and my family is standing around eating it faster than I can bone it! Caesar salad wraps sound wonderful - adding those to my list too! THANKS!

This is us, too, but the dog has to share a little with the cats :giggle
I buy them every time I go to the store. they are so great for everything everyone has mentioned!
 
this is pretty much our 'take-away option if we've been out all day and dinner time's been and gone -we'll go to the supermarket on the way home and it's just pulled apart and put into long bread rolls with (pre-packaged and washed) coleslaw salad mix or lettuce/spinach, or gravy if it's middle of winter while the kids get showered and such before bed

we usually roast a chicken at home for sunday nights dinner and for sandwiches thru the school week (packed lunches) - it's quicker than making sushi and they're the only 2 lunches DD really will eat
 
I like getting a rotisserie chicken for an easy supper. One breast for my husband, one for my son, then I get supper and several lunches from the thighs, legs, and wings.

At Costco I like to buy the shrink-wrapped pieces of rotisserie chicken meat. I cut it up and place 2 cup serving sizes in freezer bags to use as needed in any dish that calls for cooked chicken pieces. I usually get 8 cups of chicken from one pack.
 
We used to buy one and serve it with French Bread from the grocery store. Add a bagged salad, and we had dinner cheaper than going for fast food. I haven't bought one for awhile though! I should add it back into my rotation.

Cut it up and put in marinara or Vodka sauce over noodles!
Chicken casserole was our kids favorite, The kind with stove top stuffing on top.
Chicken with roasted peppers and onions feta cheese and sweet chili sauce. On nana bread.
Any salad its great on!
 
I buy them all the time. With just hubs and I, I can't be bothered roasting a turkey/chicken at home usually so this is much more convenient for us. We have 3 grocery stores a few blocks away so depending on which direction I'm coming from, I often pop in and get one. The first night we usually have it with mashed potatoes or potato salad and a veggie, often its broccoli and cheese sauce, also from the deli section. The second night we usually have a meal sized salad with lots of veggies, eggs, nuts, cranberries and chicken with ranch dressing. The third day we'll have a stirfry or burrito bowl for me (beans, rice, chicken, salsa, avocado, sour cream) and a burrito wrap for my hubs.

Oh Jenn - you've been missing out. Rotisserie chicken is a busy mom's best friend. The ones here at Sam's Club are 5 bucks and are pretty big chickens. I get lots of meat off of them and they are yummy, yummy, yummy. I've gotten the ones at Costco too, but it's not close to my house so I usually get them at Sam's Club. The ones at the grocery stores here aren't quite as big and cost a little more. You can use the chicken in any recipe that calls for cooked chicken. Just pull/cut it off the bone (easier when it's still warm) and shred or cut up for your recipes.

All those ideas sound so yummy Rae. I'm adding them to my list right now. I'm so glad everyone is sharing their ideas. My hubby will be so happy.... He gets tired of the same ole, same ole. I don't enjoy cooking so I'm not good at coming up with new dinner ideas.

I only belong to Costco but when I go - it's 25mi in either direction for a store - I def get two chickens - $4.99 each. Our local grocers are, as someone said more expensive and certainly don't have the quick turnover. I will have to look for ones at the end of the day cause it sure it getting into soup weather in my mind.
