Pad Patter: 8/22 - What did you have for dinner last night?

I was going to make salmon, asparagus and salad, but the grandbaby was fussy...I ended up helping out holding her because mommy was a bit stressed....so instead I threw some meatballs with general tsao sauce in a pan, and microwaved some rice up (all from TJ's). I just keep things like that on hand for when people are hungry and there's no time. We'll have the salmon tonight (fingers crossed)
 
We are still unpacking and it's hot. No one felt like cooking. Fortunately, my future brother in law (YAY! Can't wait until my sister's wedding!! :D ) gave us these huge, gorgeous, avacados that we were patiently for them to ripen (ok totally not patiently - we put them in a paper bag with a banana - makes them ripen faster, supposedly). So we had delicious tuna salad and avacado sandwiches with (I think) butter lettuce on them (it was light green and leafy - but not iceburg, beyond that I have no idea, LOL). My sister had the tuna salad right in the halves of the avacado which looked delicious, also.
 
We had potato soup and corn muffins. It made a lot, so thaat will probably what we have all weekend...that's a win, right?
 
Pizza... But I made it myself! And topped it with fresh summer squash, tomatoes, and green peppers from my garden.
 
I have a super easy summer pizza recipe. Make crust, top with either fresh basil or a basil pesto. Cover with sliced mozzarella cheese and then top with sliced fresh tomatoes and bake until golden and bubbly. SO good!
 
Hubby's idea of dinner was ordering pizzas....sigh...I totally blew my diet this weekend!

I was gone all day so he was suppose to cook...well, that didn't happen!
