Overnight oats?

    How do you get 1/2 cup + 1/2 cup + 2/3 cup to fit in a 1 cup jar? :rofl

    Geesh. Don't you have mason jars in every size? LOL Ball makes 2 cup jars that are very reasonable. I have a serious collection (ahhh addiction) to mason jars from my cupcake in a jar phase. Thankfully, the oatmeal is much healthier.

    I just made a batch for tomorrow morning. I can't wait to try them out! I was going to make 4 jars so my hubby and my boys could try them too, but I only has a little of the rolled oats left and I bought a whole new tub... of quick outs. Drat! :) I apparently need my eyes checked because I also thought I was making blueberry variety and bought blueberry yogurt... well, I bought strawberry. Der! I'll let you know how I like it in the morning! :)

    Yummy! Just whipped this up from your inspiration. I love Chia seeds and oatmeal, so I'm sure it will rock my breakfast world. TFS!

    I just ordered some chia seeds from amazon...the flax/no yogurt option does not look as good! :giggle

    I just ate my first jar and it's SO yummy. My boys are going to love these too! I think I'll be doing these for school day next year instead of the cold cereal Daddy was giving them all last year.

    I can't wait to try some other flavors.

    I agree!! YUM! It was so delicious - I used the nonfat vanilla yogurt I had on hand, but I'm sure the Greek yogurt will be even better! I added frozen berries and just let them defrost overnight in the oatmeal. I put it all in a 1 cup Pyrex measuring cup and it was pretty full taking up the top part above the 1 cup mark for sure. I can see this being 2 servings - but I ate the whole thing anyway:)

    I made it and loved it. I just made mine in a big bowl instead of cute mason jars though. Mine was plain greek yogurt and I piled on the fruit on top. I ate it for 3 mornings...loved every bite!! My boys either didn't try it, or did and didn't like it. My dh liked it. (my boys rarely eat breakfast though...this would've worked if I tried it when they were younger)...that being said, my youngest LOVES the chia seeds and has put them in smoothies every day now.

    I have mine all mixed up for the morning--I have to admit, I am kind of skeptical/scared--it doesn't look very appetizing and the idea of cold oatmeal has me kind of freaked out LOL I will report back in tomorrow!

    This is so interesting!
    At first I thought it was the same as the overnight steel-cut oats I make. I've been eating this every day for 3 months!

    But this is actually something different. Will have to try it sometime!

    With the steel-cut oats, sometimes I actually eat them with eggs and avocado, savory style! It tastes great that way. It's just another grain, so why not?

    My verdict is that they were pretty good. I just used plain greek yogurt and then topped it this morning with fresh blueberries, banana, and few walnuts. I definitely could half the recipe for next time for me. And I would love to try some flavored yogurt with them too. I am going to have my husband try them, because it would be a great breakfast for him to take out the door in the early mornings when he leaves.

    And Christine, I am totally going to have to try my steel cut oats with eggs and avocado--I think that avocado makes everything better! :)

    I have my oatmeal with crumbled bacon sometimes... gonna have to try the eggs and avocado... that sounds yummy!!!

    Am I the only one that the thought of oatmeal sitting overnight makes their skin crawl? :) :)

    Never heard of this, but they seem like yummier yogurt parfaits. I think I want to try it, but my kids have something odd against fruit in their yogurt for some reason? Haha, it's vanilla or nothing!

    Just make one, Erin. The recipe is just for one jar, so you can just make it for yourself. :)

    I still have to try this. Gonna get the stuff for it when I go to the store tomorrow! Can't wait - I bet the kids and I will all love it! Not so sure about Chris, but if he does, it would make a great early morning breakfast for him before work.
