Yummy! I can tell you right now that will be one that I try! I tried to find Chia seeds at my nearest grocery store and they didn't have them. I really didn't expect them too, but thought I'd try. I'm going to Meijer tomorrow for my regular grocery night, so I'll try there. Otherwise, the closest health foods store is about 10 miles away, so I'll try there next. I can't wait to try this!
lol Laura I'm TERRIBLE about eating breakfast because I'm super lazy. I'm not that picky. So I'm sure I'll like it.
BTW - I got vanilla yogurt instead of plain (was I supposed to use plain?). Hope that doesn't screw it up too bad. LOL
I'll definitely be making these! I can't remember the last time I ate oatmeal, but the fruit and chia seeds combo with the soy milk sold me - sounds so yummy!
I always have plain greek yogurt on hand...but when I mix it with fruit, I'm bad and add splenda in it...so I'll probably do that tonight when I make it.
I've been using vanilla or even the individual servings of flavored. This morning's version was the oats with blueberry chobani and then topped with fresh blueberries before serving. Really good!
must get myself over to whole foods this week to pick up some coconut yogurt... gotta put it on my list of things to do this week

Is the milk supposed to be 2/3 a cup? That is what I tried and it was really soupy. And since I don't like the taste of plain milk, I couldn't eat it...
The recipe I followed said 1/3 cup milk. Since the whole thing is made in a 1 cup jar, 2/3 would have never fit in mine anyway? The raspberry is good. I might like it a TOUCH sweeter next time. Can't wait to try some more flavors.
One of the gluten free blogs I frequent had a recipe that uses flax instead of chia...but it doesn't use yogurt either, so you would have to improvise on the liquid amount overall. http://gabbysgfree.com/2011/04/overnight-oats/
That's interesting because I use 2/3 c of milk and it's completely absorbed. In fact, it's so thick that it's hard to stir. Maybe your yogurt is thinner? Or maybe your fridge isn't as cold. Hmmm...sorry it didn't work for you.
