No Bake Cherry Cheesecake

    Anyway, here's the recipe I was talking about in chat tonight. SOO YUMMYYY

    No-Bake Cherry Graham Cheesecake

    2 cups (16 oz) cream cheese, softened

    3/4 cup sugar

    1 tsp vanilla extract

    1 1/2 tsp gelatin

    2 cups whipping cream

    1 box Honey Graham Crackers

    1 can cherry pie filling



    Mix the cream cheese, sugar, vanilla and gelatin and beat until smooth and fluffy. In a separate bowl, beat the whipping cream until stiff peaks form. Fold all together, gently but completely. Take the crackers and put 1 layer at the bottom of a rectangular glass baking dish. (You might have to snap some crackers to adjust so that the entire surface is covered). Then spread 1/3 of the cheese filling on the crackers, then another layer of crackers, cheese filling, crackers, cheese filling. You end up with 3 layers. Cover the dish with cellophane and refrigerate overnight. This is very important, as you want the graham crackers to soften. The next day, spread the cherry pie filling on top of it. Cut with a knife dipped in hot water. Keep refrigerated.

    I thought I made it for Christmas but it was actually for Thanksgiving. Time sure did fly by.

    omg that sounds fabulous! I just need to find a substitute for graham crackers...anybody know?

    Digestive biscuits maybe Eryn? No Graham Crackers here either but I think digestives are pretty close!
