nachos-with-beef-vegetable-and-cheese.jpg

I have to confess that I googled nachos and found out how they were created and it was so interesting. We didn't have nachos when I was growing up, but it was something our children enjoyed and begged for at home. I make a spaghetti bolognaise type flavoured mince and pour that over a nest of doritos chips, add some grated (shredded) cheese; gouda or cheddar depending what we have, grill it in the oven for a few minutes and serve it piping hot. It's quick and easy, great for a Friday night dinner. No chilies or beans for us.

So let me have it.
1. How do you do nachos?
2. Do you enjoy them at restaurants?
3. Hot and spicy or mild as they come?
4. What kind of cheese?
5. Which night of the week would you serve it?

1. How do you do nachos? Tortilla chips, topped with ground beef with taco seasoning, cheese, jalapenos, and a little sour cream. No beans for us, either.
2. Do you enjoy them at restaurants? Depends on the restaurant. Some are better than others.
3. Hot and spicy or mild as they come? Hot and spicy for sure!!
4. What kind of cheese? Cheddar, Colby, or Monterey Jack. If I'm making them, I will usually buy the bag of Mexican blend shredded cheeses.
5. Which night of the week would you serve it? Probably Friday or Saturday :)

1. How do you do nachos? OFTEN. I prefer nachos over tacos and my family also prefers alternatives. 'Taco Tuesday' in my house includes many of the same ingredients but they're often wrapped in tortillas or eaten on top of rice. It's also not limited to Tuesday. :D I've made them different ways but in the last year I've found a really good vegan cheddar that actually melts well. So I top a plate of tortilla chips with that, beans, and sautéed veggies. Usually I also add avocado (the best food that exists) and salsa.
2. Do you enjoy them at restaurants? I have, but it has been a very long time since I've been to a good Mexican restaurant, sadly.
3. Hot and spicy or mild as they come? I'm in the middle here. I like a tiny kick.
4. What kind of cheese? vegan, if any. There are other creamy things, like avocado, and sauces that can be used instead, thank goodness, as I have been lactose intolerant for over a decade now (but grew up in southern California loving Mexican food).
5. Which night of the week would you serve it? Any time is a good time for nachos!

1. How do you do nachos? I love tortilla chips with a white cheese dip. The closest I've found to our favorite restaurant is called Gordos. I'll eat nachos with taco seasoned ground beef, refried beans, cheese, onion, black olives, jalapenos, lettuce, tomato, and sour cream or ranch dressing.
2. Do you enjoy them at restaurants? Yes, our fave local restaurant has the best chips and salsa! I love their white cheese dip.
3. Hot and spicy or mild as they come? I'd say mild. The most spicy I get is jalapenos, but even those I prefer mild.
4. What kind of cheese? Extra sharp cheddar cheese
5. Which night of the week would you serve it? Any night!!!

So let me have it.
1. How do you do nachos?

Tostitos scoops, ground beef, 4 cheese mexican blend, tomatoes, guacamole, olives, black beans!

2. Do you enjoy them at restaurants?
Yes, even more because somehow they bake them differently!

3. Hot and spicy or mild as they come?
Notice I didn't list salsa. Mild as milk, please!

4. What kind of cheese?
4 cheese mexican blend, or cheddar.

5. Which night of the week would you serve it?
Any night, any day of the year. I LOVE NACHOS!!

I love nachos (minus the meat), loaded with cheddar, peppers, olives, salsa, guacamole and sour cream. My fave is with blue corn organic nachos which are thicker and don’t get as soggy from the toppings. I only have them occasionally at home and almost never at the restaurant. I tend to pig out on them so save them for a treat now and again.

Colby, or Monterey Jack
It's interesting to me that we don't have these varieties.

I'm in the middle here. I like a tiny kick.
I can probably get on board with a tiny kick, very tiny.

Not picky on meats..I've done pork..burger.. steak.. Chicken ..
Sounds like I am missing out- we have only done chicken and minced beef.

I'll eat nachos with taco seasoned ground beef, refried beans, cheese, onion, black olives, jalapenos, lettuce, tomato, and sour cream or ranch dressing.
sounds like something I really need to try. Live a little!

Mild as milk, please!
me too.

blue corn organic nachos
another new to me. Blue corn?

OO - I forgot the Blue corn chips. They're yummy!!!! Costco's Kirkland brand Organic tortilla chips are really good too!

I like mild flavored nachos. Surprisingly, the best nachos I ever had were at an Irish restaurant where they used thinly sliced potatoes instead of corn chips.

1. How do you do nachos? At home, scatter on a plate, top with taco seasoned beef, shredded cheddar cheese, and sour cream. I pop it in the microwave to melt the cheese (before adding sour cream).
2. Do you enjoy them at restaurants? Yes! I love the free chips and dip...is that nachos then? lol
3. Hot and spicy or mild as they come? Somewhere in the middle!
4. What kind of cheese? Cheddar or queso blanco
5. Which night of the week would you serve it? Any night! It's an option any time we make tacos.

1. How do you do nachos? I have a recipe that I make. Browned ground beef over tortilla chips, refried beans, and shredded cheese. Bake in oven, remove and then cover with queso, tomatos, lettuce, and sour cream
2. Do you enjoy them at restaurants? Yes
3. Hot and spicy or mild as they come? medium
4. What kind of cheese? any kind really
5. Which night of the week would you serve it? any day of the week, lol.

1. How do you do nachos? Tortilla chips, with shredded pork, nacho cheese (comes in a jar and is heated and the poured on), chopped tomatoes, chopped onions and jalepenos on mine.

2. Do you enjoy them at restaurants? Not very often because there's usually something else I'd rather order. :giggle

3. Hot and spicy or mild as they come? Spicy!

4. What kind of cheese? Nacho cheese

5. Which night of the week would you serve it? Whenever I have all the ingredients!

I don't make nachos very often because my family prefers them with the shredded pulled pork and it takes all day in the crock pot and I always forget to do that step ahead of time. Lol.

1. How do you do nachos? Chips, meat, queso, salsa, sour cream
2. Do you enjoy them at restaurants? I do but they aren't really my go to item.
3. Hot and spicy or mild as they come? Spicy!
4. What kind of cheese? queso
