I have to confess that I googled nachos and found out how they were created and it was so interesting. We didn't have nachos when I was growing up, but it was something our children enjoyed and begged for at home. I make a spaghetti bolognaise type flavoured mince and pour that over a nest of doritos chips, add some grated (shredded) cheese; gouda or cheddar depending what we have, grill it in the oven for a few minutes and serve it piping hot. It's quick and easy, great for a Friday night dinner. No chilies or beans for us.

I've made them different ways but in the last year I've found a really good vegan cheddar that actually melts well. So I top a plate of tortilla chips with that, beans, and sautéed veggies. Usually I also add avocado (the best food that exists) and salsa.
