Meatloaf

the food, not the dude...what do you put in it? Haven't eaten or made it in years! (I was a vegetarian for 8 years)
 
This is how I make it.

I cut the horseradish in the topping down a bit so it's not too spicy for the kids. Or I just put ketchup on theirs. I love these!
 
ha ha...I totally thought of meatloaf, the singer! I don't have a recipe for my meatloaf but generally what I do is mix ground hamburger/turkey with bread crumbs (gluten free), an egg, a splash of milk, chopped onion, garlic, salt & pepper, some chili flakes, italian spice blend, celery salt and mix together, not over-handling it. Put into greased loaf pan and bake at 350 til its lost its pink color. Then I put a mix of tomato paste, brown sugar & sprinkle of mustard powder overtop to finish baking.
 
2/3 hamburger + 1/3 sausage OR ground pork
1 egg
some type of binder: bread crumbs, flour, etc.
salt, pepper, chopped onion, minced garlic, ketchup, mustard, Italian seasoning, Worcestershire sauce, soy sauce, cumin, chili powder
 
OMG! so funny. I made meatloaf last night and my 12 year old specifically made me promise him that there would be some left for him when he got home from football practice today...LOL! We haven't eaten it in months, but it was so good. This is how I make mine.

2 lbs. ground sirloin
1 cup minute oats or more if it too wet when done mixing
2 eggs, slightly beaten
1 medium onion
1 envelope onion soup mix
salt and pepper to taste
8 oz. can tomato sauce
2 green peppers
 
I don't remember the recipe I haven't done it in AGES, but I used BBQ sauce in it. LOL!!!
 
OOoo, this sounds good - do you chop the onion and bell pepper up and mix w/ the meat or do you brown them up in a skillet first?

i just chop them and mix them with the meat. seriously, there is never much left when i make it. my oldest son says it tastes fluffy...lol. :) there was enough leftover today for my hubby and my FIL to have meatloaf sandwiches for lunch AND my oldest son will still have some for dinner tonight. he made sure that i saved him some. he loves it that much. no complaints here. less cooking tonight.

Sounds good. I think I will try this. I know my mom used to used the onion soup mix.
 
Instead of breadcrumbs or crackers or whatever you might use to hold it together, use panko instead s seriously YUMMO!!!
 
You ladies are inspiring me to make this. Might try this weekend. I've never had meatloaf :p
 
The best meat loaf my mom ever made me had crescent roll dough placed around the outside of it - amazing!! If only I could still eat crescents...

Made this tonight and we loved it! My DD who was not thrilled I made meat loaf actually asked for seconds and then decided that maybe she likes meatloaf after all. I did not alter other than I used gluten-free oats. Thanks!!
