Joy in a Jar! Mason Jar salads!

    Hey guys! :peekin I love the change of seasons- esp September + back to school! - it's like new Years for me! I am on a new eating better kick- not for weight as much as I want have better lunches when i work so Im not drained for energy at night! So- I have gotten into making salads in a jar- now I have something great to eat for lunch (or a quick salad already made for the family while i cook dinner-) I shared a few tips and recipes on the blog today- and would LOVE if you have any tried and tested ones! :yup (Ps- I don't like veggies! :giggle!)

    I don't make these, but there is a salad I absolutely love that would probably work quite well in a jar.

    Grab Ken's Lite Raspberry Vinaigrette for your dressing. Then you'll have your lettuce (butter leaf, romaine, mixed spring greens ~ whatever is your fave) and then use feta cheese, blueberries, chickpeas, grilled chicken. Oh my word, YUMMO.

    I have been searching for ideas for lunch because I've been so tired of the same ole, same ole. I love the post and am definitely going to try some of these!! Thank you! Following this thread for more ideas!! :)

    My favourite "all in one" salad. Actually must scrap a recipe page for this,so thanks for the reminder.
    Lettuce ,mixed green leaves,some grated carrot,thinly sliced onion,( or some pickled ones.) Tomato,cubed apple if you like fruit in your salad, peas and or chickpeas, A thick slice of smoked ham cut into bite size bits,feta cheese with herbs crumbled over everything,a honey and mustard dressing. It does not get better than that. Tastes good with leftover chicken too.

    I need to do a salad in a jar. Your post inspired me last night to do overnight oats in a jar for the kids (I hate making regular oats in the morning cuz it takes time and they're hungry RIGHT NOW, so the overnight seemed like a good idea). Anyway, the honey and peanut butter ones my daughter decided on were great. Sorry I don't have a recipe to share cuz she just dumped stuff in until she was happy. Now DH and I should try salads for tmw's lunch.

    I recently bought some jars to try salads in a jar with, but they are still unwashed and wrapped in their original packaging! I just haven't had time to wash them -- I'm barely keeping up with my normal dishes. I want to do it now, while I can grab vegetables from the farmer's market! Thanks for the inspiration/reminder! LOL

    It wasn't in a mason jar, but tonight I had 1/2 spinach, 1/2 butter leaf lettuce, walnuts, feta cheese, grilled chicken, blueberries, dried cranberries and Ken's Lite Raspberry Vinaigrette. It was delish!

    Well as it certainly seems that I'm not going to be canning this summer-->fall, I will have to get my big jars and make some of these salads. I swear I read Peppermint Granberg's blog post about these a couple of years ago but have still not made myself salad in a jar. I make my own dressings, often after making hummus in the food process so the garlic, oil and vinegar get a nice emulsion from the pureed chickpeas etal.

    I really need salad meals as lazy me has gained pounds this summer. :overreact

    Today's the day for me....meatloaf for him and salads for me. I believe they'll be shrimp this week.

    I make these a lot. I have the mason jars and plastic lids for them instead of the metal ones. My fave is a mexican salad with black beans, tomatoes, peppers, lettuce, tortilla strips and spiced hamburger/turkey. If I'm out of the house, I put less into the jar and place a small sealed container on the top level of the jar with my dressing (sour cream/salsa) so I can add the dressing when it's time to eat and just shake the jar up to mix it all together, or if at home, just add the dressing once I dump it into a bowl.
