I've been on my low carb no sugar diet for a few weeks now. I get really crabby and annoyed when I want pizza or a burrito and can't have it, lol. Well, I can't say that has changed, but I've discovered a couple of meals that are totally delish even without carbs. Chris has been totally sweet and buying me tons of fresh veggies and fruits. I eat the fruit for breakfast, which I love. But my issue was coming up with dinners and lunches that weren't salad. I like salad, but I certainly don't want it when I'm craving carbs, lol.
The other night, I made low-carb "pizza" that I found on a website. You soften a pack of cream cheese (full fat) till room temp, then beat in 5 eggs. Then you just add in some italian seasonings. Spray a 9x13 with pam or butter it, then sprinkle 1/2 cup parmesan and 1/2 cup other cheese (I used italian blend shredded). You then pour your egg "crust" on and bake it for 25 minutes. YOu can adjust the amount of eggs/cheese to make a thicker or thinner crust. This amount I would say is similar to an original style crust in thickness. after you bake the crust, you put your sauce, veggies, meats, and cheese on top like a regular pizza, and bake it till everythings hot. OH my gosh it is good! It almost satisfied my pizza craving too. I hate eggs, but I couldn't taste them with the cream cheese and all the toppings. Seriously yummy.
The other thing is Chris has been making me veggie soups. Last night he steamed a bunch of brocolli and cauliflower, onions, frozen pepper mix. Then he threw a bunch of seasonings in and later added portabello mushrooms and a can of veggie broth. Then we pureed it up - not totally, but so that there was a thicker base. Oh my gosh it was yummy with some cheddar on top! You can put whole whipping cream in it too if you want it creamier.
I still haven't come up with a good substitution for my burrito craving tho. I am a vegetarian, so meat is out. I'm thinking maybe of making the pizza recipe but with taco seasonings and then topping it with sauteed veggies and then cheddar for a more taco-like pizza.
