I actually found something non-carb that I like to eat!!

I've been on my low carb no sugar diet for a few weeks now. I get really crabby and annoyed when I want pizza or a burrito and can't have it, lol. Well, I can't say that has changed, but I've discovered a couple of meals that are totally delish even without carbs. Chris has been totally sweet and buying me tons of fresh veggies and fruits. I eat the fruit for breakfast, which I love. But my issue was coming up with dinners and lunches that weren't salad. I like salad, but I certainly don't want it when I'm craving carbs, lol.

The other night, I made low-carb "pizza" that I found on a website. You soften a pack of cream cheese (full fat) till room temp, then beat in 5 eggs. Then you just add in some italian seasonings. Spray a 9x13 with pam or butter it, then sprinkle 1/2 cup parmesan and 1/2 cup other cheese (I used italian blend shredded). You then pour your egg "crust" on and bake it for 25 minutes. YOu can adjust the amount of eggs/cheese to make a thicker or thinner crust. This amount I would say is similar to an original style crust in thickness. after you bake the crust, you put your sauce, veggies, meats, and cheese on top like a regular pizza, and bake it till everythings hot. OH my gosh it is good! It almost satisfied my pizza craving too. I hate eggs, but I couldn't taste them with the cream cheese and all the toppings. Seriously yummy.

The other thing is Chris has been making me veggie soups. Last night he steamed a bunch of brocolli and cauliflower, onions, frozen pepper mix. Then he threw a bunch of seasonings in and later added portabello mushrooms and a can of veggie broth. Then we pureed it up - not totally, but so that there was a thicker base. Oh my gosh it was yummy with some cheddar on top! You can put whole whipping cream in it too if you want it creamier.

I still haven't come up with a good substitution for my burrito craving tho. I am a vegetarian, so meat is out. I'm thinking maybe of making the pizza recipe but with taco seasonings and then topping it with sauteed veggies and then cheddar for a more taco-like pizza.

Anyway, just wanted to share that because I have been having SUCH a hard time being happy with my meals on this diet. I know some of you are doing the low-carb no sugar thing too, so thought someone might want to try these. :)
 
The pizza sounds good but it would be a no go over here. I'm the only one in the house that eats cream cheese, lol!

Glad you're finding things to at least help with the cravings! I'm bad and just give in!
 
i need to try that pizza thing! Just because it sounds awesome!

Another meal you might like to try that I recently heard of, is to finely dice a heap of raw veggies. Throw them all in a bowl with some tuna (not sure if you eat that?) and mix it up. With the veggies diced tiny, it is meant to be really good. I would have mayo on the side too :)
Even without the tuna it;s worth a try for something different.

we have taco night often... and I usually just put my taco fillings on lettuce and turn it into a salad instead of using a taco shell... so maybe you can do that too with your burrito fillings instead of putting it in a tortilla just topping a salad with those fixings and use salsa and guacamole as your "dressing"

I do that with fajita fillings too... I really like making portobello mushroom fajitas... so I think that would be really yummy with some black beans and a bunch of sauteed veggies

YOu should try making it without telling everyone there's cream cheese in it Nikki! I betcha they won't be able to tell! Its all whipped up with the egg. :)
 
See, my only problem is that I can't have the beans with it because they're carbs, so really just have the lettuce, cheese, and salsa then, lol. I can do that with fajita veggies though. I do make the fajita veggie thing sometimes - put a bunch of sauteed veggies in a bowl with salsa, sour cream, and lettuce. I am going to have to try adding the portabellos like you do - yumm!!

Oh Goodness.....if only I had just me to cook for. DH is purely a meat & taters man and it almost drives me nuts. I'm just so glad that when he's away to deer camp, I can cook these kind of meals.
 
I don't eat tuna. I do love veggies though. I love to cut everything up and just add some vinegar and olive oil with a bit of salt. THat is yummy. My kids like to eat Bob and Larry salad around here (Veggie Tales), which is just tomato, cucumber, and the vinegar/oil dressing. :)
