i never use old eggs, and mine always peel fine...???
but i steem my eggs, i don't boil them. i put them in the steamer for 35 minutes, then let them sit in there another 5-10 once the timer goes off. i put them in ice water after that and let them sit until the ice melts. then i peel them. it's super easy, but it takes a bit of time.
