hardboiled egg?

I need to learn because I follow the recipe in the Southern Living cookbook I have and it tells me to do this:

- put the eggs in a pot
- fill pot so the water covers the eggs about an inch over
- set on stove and get water to a boil
- as soon as it starts boiling, pull the pot off of the burner and put lid on and let sit for 15 min.
- Once it's set for 15 min... drain immediately and cover eggs with cold water and ice.

The eggs taste good BUT man, peeling the eggs is a PAIN IN THE BUTT!!!

I'm wondering if draining the hot water and immediately putting the ice cold water on them makes the shells stick to the eggs more so. Maybe they need to be gradually cooled?
 
I do almost exactly like you but instead of putting the eggs into ice water, I run cold tap water into the pot of hot water to gradually cool the eggs. Seems to work well for me, and I don't generally have an issue peeling the eggs.
 
yep...what Angie said. The boiling process doesn't have anything to do with the peeling. If I'm going to hardboil eggs, I buy some ahead of time and let them sit a week or two in the fridge before I boil them.
 
The eggs have to be old to peel easily. Like two weeks? I bought eggs on Monday so that I can make deviled eggs for Xmas.
 
I am not an egg fan but I make hard boiled eggs for my daughter. I find peeling it ok, but I don't have anything to compare it to.

I cover eggs with cold water and place on medium high heat until waters boiled
I take the pot off the burner and put the lid on, set timer for 18 minutes
then into cold water for 15 minutes
 
I saw somewhere (probably pinterest) that if you add some baking soda to the water they peel more easily.... But I've never tried it myself.
 
I do the same as Sarah, but yeah, the older eggs peel better every time.
 
I add baking soda to the water and it works great. They peel very easily!!!
 
Thanks for the tip about the older eggs peeling easier! I normally cheat and crack the shell all over and then peel off a little bit and then slip a metal teaspoon in the gap and slide it under and lift off the shell that way ... I've never had any problems peeling eggs this way :)
 
Wow! I had no idea about letting them sit for about 2 weeks before boiling them. Thanks ladies!!!! :clap

I always use old(er) eggs, add 1 tablespoon of vinegar to the water,
boil for 1 minute, take off the burner but leave the eggs in the hot pot for at least 5 minutes,
then drain out the hot water and run cold water in the pot in the sink until the eggs are cold,
they will peel with no problem :)

I don't. Hard boiled eggs *have* to be one of my least favorite things. ;)

We buy farm fresh eggs - so I have to let mine sit in the fridge for almost a month before I can use them for hard-boiled eggs. The eggs you buy in the grocery store are almost a month old by the time you purchase them.
 
Good tip about the age of the eggs. After boiling, I do drain and cover with ice and water. After a bit, I drain that off and then shake the heck out of the pan to break the shells all over. I don't generally have much trouble peeling them that way.
 
I was just diagnosed with gestational diabetes so eggs are in my future these days. I don't know if you might have this at your supermarket but Eggland's Best actually has 6 peeled hardboiled eggs in a sealed bag in the egg section. They've proven to be one of the best discoveries I've made because I am not fond of peeling them either!
