    Holy guacamole, it's national fajita day! Normally I'd say it was taco tuesday, but I'll take fajitas as a close second. Especially if they're filled to the brim with steak and chicken and have plenty of peppers and onions. Oh and don't forget the chips and guac!

    Sometimes we make our own but when we can we love to Chili's for a sizzling plate of fajitas. How about you? What meats do you like on your fajitas and do you make your own or go to a restaurant?

    Ohhhhhhh, I love fajitas!! I love that I can eat them however I want!! What a great National Day!!

    We've been getting fajitas for years! DH used to even stop on his way home from work and pick them up. We used to love when he brought them home! Yummy!!

    I adore fajitas, but haven't had them in so long. I usually pass on the tortillas, and just eat the meat and veggies on the plate with pico and guac.

    LOVE fajitas, but I can only have them with shrimp and corn tortillas these days. They're so savory!

    Yum!!! Fajitas are a favorite here! In fact, we'll be ordering them for delivery on Friday! Clara leaves for college Saturday morning and has requested fajitas from Uncle Julio's for her last meal :-) She likes chicken, I like steak... Jeff likes them both!

    At Downtown Disney at Disneyland, Clara and I always order the portobello mushroom fajitas from Tortilla Jo's the first night we're there! So good.

    I'm gonna pass on the tortillas too. I've been trying low carb for a couple of weeks and it's been going ok.

    Shut the front door: we had fajitas (with guac) for dinner tonight! Wish I'd known about this "holiday" because I didn't make any photos (left my phone in another room). Dang!

    DH made our guac and pico de gallo. Both had items from our CSA and our "victory garden," as DH refers to our backyard garden. Tonight we had chicken fajitas because of my red meat allergy, but of course the kids and DH love steak on theirs.

    I love me some fajitas. I've never made them at home myself. Anyone have a recipe? I make my own guac and that is a favorite for my fam with tacos... but I would love to try my hand at fajitas!

    Oh yummy! Now I want chips and guac! Spicy quac is the best too. I do make fajitas at home quite often. It's one of my hubbys favorite meals, but my youngest doesn't love them because they have "eels" in them. (onions). When he was little he called them eels and would pull every single onion out. It just stuck and he still calls them eels. He'll even eat most other things with onions, but still not in a fajita. :giggle

    I don't even add any spices, so mine are SUPER easy. I buy cooked and sliced chicken from my deli (they do season the chicken). So I throw that in a pan and slice up onion and green peppers and cook until the veggies are crisp, but starting to cook. Then I smear a little sour cream in a tortilla, sprinkle with some shredded cheese and put a scoop of the chicken/veggies in and roll it up. Takes so little time and they are yummy. I do NOT like using frozen Tyson chicken made for fajitas... it's gross and has fat and icky bits and very little good chicken! I'm too lazy to cook my own chicken from scratch usually. :giggle but you could buy chicken breasts and slice those and fry those up too and sprinkle with fajita packet spices.

    Awww man! This Mexican food aficionado missed it!!! We did buy avocados for homemade Guac, but they were ALL rotten inside!!!! HATE that. Next year I am growing my own. Will take a year or two, but why not?! BTW Rick Bayless sells his sauces in the grocer- they are good, but once in awhile too salty. His fajita sauce is good!

    I just follow the recipe on the fajita seasoning envelope. It's super easy.

    Getting rotten avocados is the worst! My teen is the avocado whisperer and can pick the best ones. Unfortunately she doesn't like to go to the grocery store with me so it's always a crap shoot on what I pick. I will say I've gotten better from listening to her but I'm still not there yet.

    We had an avocado tree in our backyard in Honduras. Knowing how they "should" be ripe is not difficult- a slight thumbprint usually does the trick. BUT since these are shipped in here- there is just no way to know- they look perfect on outside but when cut open, arrrrrrrrrrrrrrgh. I think they aren't picked at proper time.

    I make sheet pan chicken fajitas every once in awhile. Going to a restaurant and then having a bunch of hot pans delivered to you so you can put your own together seems like it's missing the point of going and being waited on in the first place! :giggle

    LOVE fajitas!!! We have a local restaurant where we will get them. We can get Fajitas for 2 and almost feed our whole family.

    I do make them myself as well. I'll usually make them after a night that we have grilled chicken and I'll make extra. Then the next time I'll fry up some onions and peppers add the chicken in just to reheat and serve it with all the traditional Fajita stuff. Super easy and yummy.
