I keep telling myself that I'll do this, but never do! LOL. I have done a few breakfast things...egg & cheese english muffins, whole wheat pancakes, etc. and frozen those. It does make mornings easier! I've been working really hard to cut down on processed foods, and I know that making and freezing ahead would make it easier, but I just can't motivate myself to cook for 8-10 hours!
I usually only double or triple batches... and when I do that I really don't feel like cooking anymore but I always wish I could try something like this too. I started selling Epicure products which is a canadian based business (sort of like Avon, Pampered Chef, tupperware...) and all the products are spices and the likes. All natural no preservatives. You mentioned meatloaf Krista! OMGosh...I love meatloaf, and not one of my boys will eat it. It's not even one of my dh's favorite things, but he'll eat it if I make it. How can my boys not even like one of my most favorite comfort foods? That's just wrong!
I do some freezer cooking. My favorite is chicken noodle soup. I buy rotisserie chicken from Sam's, come home and take off all the meat, chop and divide into two parts. One I use that week for another meal, and one I bag and freeze for soup (or you could freeze both) I put the chicken carcass in the crock pot with chopped carrots, celery, onion, garlic and either lemon halves or a bunch of parsley. Fill up with water and cook on low 8-10 hours. Drain and freeze. I also buy onions, carrots and celery in bulk. I chop and freeze 2/3-1 cup of each in a quart bag and freeze. The veggie blend could be used for any soup base, the chicken and chicken stock can be used for other things as well, which is why I freeze the three individually. It's nice to have options. But on soup day I just thaw out the stock, chicken and veggies, bring to a boil, add frozen egg noodles and cook until tender. My families favorite winter meal.
thank you sooo much everyone for all the tips and ideas!! I have heard other people say to get rotisserie chickens and shred them up for tacos and what not! maybe we should do that too Rebecca?? It is easy!! Anyone can come! Though I am inviting people to Rebecca's house, but I don't think she'll care! hahaha! It can be a TLP Cooking party!

yep, when i told him we were talking about getting together his first response was, how do you know she is not a he who is a crazy serial killer? um, well honey, she - i mean HE - would have to be REALLLLY patient. and consistent. in several forums and sites. for a LONG time. without ever slipping up. Sooooo, if HE is that good, then i guess it sucks to be me when he gets here. what a ninny i am married to!
I pin a lot of freezer meals, does that count? I'm cooking this week and freezing the leftovers so we can eat them next week because Joel is gone and the kids don't care. But if Joel knows that I've frozen something and reheated it, he eats like three bites and then has cereal. He's so stubborn sometimes.
Oh my gosh I am all over this!!! We just started baseball this week - all three boys - and my daughter starts girl scouts next week - we are going to be busy almost every night of the week and I'm in a panic about how in the world I'm going to plan/ prepare dinner!!!!!!
I don't cook many meals that freeze well and don't have a big freezer. But I am trying to find a couple of freezer meals to help out the family of a girl in DDs class at school who lost their dad suddenly recently.
Hahaha!!! this completely cracked me up, because one day I was talking to my husband about a conversation on a forum about getting together and he was all horrified "you didn't tell her where we live, did you?"
Amy, those are great ideas!! The Once a Month cooking book that I followed did a lot of that type of thing, it is alot of chopping and prepping, but it really does save time and when I was really following it, I had very little waste too.

I have large pots, when I cook, preparation always double and freeze the other party, always have many things in the freezer. is a good idea ... actually here in Sao Paulo, Brazil, there are companies selling frozen product at a small value, they are like the ones made at home are wonderful ...

Crystal, we can always meet in a public place if that would make the men feel better. Then we can determine crazy / not crazy and move on from there.
This is something I always say I'm going to do, and I really want to, but I haven't yet. Sometimes, like when I make lasagna or something, I do make double and freeze it, but it's not very often. Of course, seeing as how I just set my stove on fire it's going to be a little bit before I do any major cooking!
