I'm not lactose intolerant...but ever since my surgery in 03 sometimes too much dairy makes me feel kinda wonky so I got this recipe off of Recipezaar and it's totally yummy...if you use Vanilla soy milk it kicks it up a notch too:
Vanilla Soy Ice Cream
And I love peppermint ice cream and this is my tried & true recipe for it (it's for 4 quarts)
2 1/2 C milk
2 C sugar
1 t salt
2 1/2 C half & half
1 1/2 t vanilla extract
6 C whipping cream
2 C peppermint candy
Scald milk until it bubbles. Remove from the heat. Add sugar & salt, stir until dissolved. Stir in half & half, vanilla & cream. Cove & put in the fridge for about 30 mins. Crush your candies & then stir into the chilled mix. Then freeze.
I have a bunch that came with my maker...some of my favs are cherry yogurt, pina colada yogurt, spiced cider sorbet & praline almond fudge ice cream...I can scan them & send them to ya
