Happy Cinco de Mayo!! Anyone celebrating today?? I know better than to try to get anywhere near any of the Mexican restaurants here today. I did that once and it was insane. If I had groceries, I would have made something myself, but my cupboards are bare lol. Maybe I'll celebrate a day late
I didn't even realize it was Cinco de Mayo yesterday until my hubby asked me if we were having tacos for dinner. Lol. We didn't even do that though because we had 3 awards events to go to last night at 5, 6 and 7:00. Thankfully they had hor-d'oeuvres at the middle event.
My middle grandson turned 29 yesterday. He celebrated with his friends (brunch), so we'll go out to dinner next Sunday instead.
I love Cinco De Maio but we didn’t get to celebrate. Was cleaning up and relaxing after a Derby Party lol!
This time of year is always pretty busy here with Cinco de Mayo and then my birthday on the 6th and mothers day is usually the following weekend (or sometimes even the same weekend). I love it but it's kind of like having your birthday right near Christmas. My sister was here visiting and she and my daughter and I went to the Barbie exhibit at the Phoenix Art Museum which was SO CUTE and fun. Then lunch out and THEN dinner for my birthday at Nobu. Amazing day, if not particularly Mexican-themed.
We didn't get to celebrate Cinco de Mayo with Mexican food. It actually snowed here and there was no way hubby was gonna go out in that to grill up the street tacos, so I made chicken soup instead. We'll do the street tacos another day when this storm moves through.
Love mexican food, but I don't eat them so often, so spicy for me. I had some tortillas filled with mozzarella cheese, avocado and tomato slices, trying to emulate something that mexicans call quesadillas de queso oaxaca, the taste it was good, and close to those quesadillas, maybe a little bit sweet. I prepared as well some corn kernels with mayo, lime and salt.
