MOC isn't just about finishing 31 LOs. As Angela said, it's about learning new things and enjoying scrapping among others who also love it. Don't think about the finish line: think only of your next LO.
I'm trying to finish because it makes me happy to step outside my comfort zone and try new things. Also, the bonus of a memory scrapped! You could start with the ones that appeal to you and then see how you feel about all of them.
