Summer Dinner Ideas

    Sarah posted asking about meal plans and had a great blog post to go with it.

    Summer menu planning is a sore spot for me, :dizzy so I wondered if you all would share your high-temp-days meal ideas or favorite recipe links so I can put together a meal plan because I seriously have little to no ideas of what to make when it gets hot outside.

    I have just been thinking about this very thing!!

    We like salads a lot in summer time. A good taco salad is always nice. We also tend to grill a bunch of chicken and then eat on it for the week.

    I can't wait to get some new ideas.

    Do you have a pressure cooker? I do use that all year round.
    I made a pulled pork in mine yesterday that was great and it didn't heat up the house!

    We brown up a couple pounds of ground beef or whatever and make taco meat, then keep all the fixin's for taco salad and/or tacos. Making a big pasta salad in the morning with enough for another meal. Pulled pork, bbq beef in the slow cooker. I like the chicken idea because you can do different things with it for meals.

    I never think about weather when we think about food. It's hot in AZ all the time :giggle
    These are all "regulars": turkey burgers, chicken stir fry, hot dogs, nachos, homemade "Kaydee safe" pizza, tacos and bbq chicken sandwiches.
    (I also have toddlers, and these are things we make over and over and over again because chances are 90% of the time, they will eat them.)
    We have recently tried a vegetable jambalaya, and a lentil recipe. we liked those. We try a "meatless meal" a few times a month.
    Also Brinner (Breakfast for dinner) - where I make banana waffles (Banana/oats/water in a blender), use the waffle maker, and then serve with nut-butter and syrup.
    Love my crock pot, too. I have a few crock pot recipes I go back to over and over and over. (Honey chicken, brown sugar chicken, pot roast, chicken chili)

    my Summer menu consists of salads, salads and more salads ... except on days its too hot to be in the kitchen and then I am off to an air conditioned restaurant or cafe lol

    This looks super yummy. Hubby's more of a main course hot kinda guy, but I think I may try it.

    We do grilled dinners a lot. Lately though I have had a strawberry salad fetish. They are in season, super cheap here, and sooo delish!

    Fresh spinach leaves, strawberries sliced, blue cheese, sweet red onions (can be left off), and toasted pecans. Top with balsamic vinagrette. YUM!

    I just toast the pecans on the stovetop quickly with a smidge of oil or some PAM. Adds the perfect touch.

    We do a lot of salads here too, or we tend to make a bunch of meat in the start of the week and use it to create meals all week long so we don't have to cook it. Eric's staple in a rush is always pizza or mac and cheese. But we try to eat different things.. the kids really like Gyros lately
