Love this! I'm always looking for new ideas! At least half of the year, we feed & house 2 hockey players in our home- so meals are usually- a) PROTEIN heavy & b) A LOT OF FOOD. It's kinda funny when the boys leave & I have to adjust to cooking for just my 2 kids & hubby! lol I HAVE to weekly meal plan- as we are busy with our own kids' activities & work, so I shop grocery & go to costco once/week for the planned dinners. Plus, it's nice to plan for when the boys are gone at away games- sometimes we fend for ourselves those nights or leftovers (if there is any.) We also purchase from a local ranch a half of a beef at the end of summer- it ends up being so much less expensive to feed all these growing teenagers! Here's this week: Monday- Pot Roast Tacos (I don't always make the sauce & it's still delicious. Most of the family makes soft tacos or burritos, one of the boys really likes to make nachos out of this & I usually add the meat to a big taco salad) Tuesday- Bacon Cheeseburgers, Greek Potatoes, Salad Wednesday- Left overs (boys at an away game) Thursday- Spicy Teriyaki Salmon, Rice & garlic green beans Friday- Pregame (boys' pregame is chicken & rice- I try to make it different with spices, we usually make enough for their pregame meal & then leftovers for us.) Saturday- Pregame Sunday- OUT for Sam's birthday dinner
I’ve been terrible about dinners since we became empty-nesters. I buy a rotisserie chicken every week from Sam’s Club and make chicken quesadillas, chicken noodle soup, or chicken tacos. we also do grilled cheese and ham sandwiches, nachos and taco salad. I really need some new ideas.
I get two chickens at a time...I shred them both and put one in the fridge and one in the freezer. Comes in handy, for sure!
I tend to make a lot of the same meals lately. Some faves lately are roasted chicken pieces with veggies/potatoes cut up, spritzed with oil and spiced with parmesan/truffle spice and garlic or taco seasoning. I like that it's a one pan dish so after chopping and seasoning, it just gets plopped into the oven for 40-50 min and dinner is ready. I also like to thickly slice white or sweet potatoes or any root veggies and roast with a bit of oil and seasoning, that goes into the fridge for the week and gets warmed up to add to buddah bowls. Chili and spaghetti are good dishes to bulk cook to freeze for other meals. We often eat chili served over rice with fried mushrooms in mine and shredded cheese for my hubs.
peanut butter and sriracha noodles. Hear me out, cook up some noodles (ramen works great), mix peanut butter, soy sauce, a bit of honey, and a splash of sriracha for a creamy, spicy sauce. Toss in some shredded carrots or leftover chicken if you’ve got it
