Rotisserie Chicken | Pad Patter 12.28.16

Yes, I buy one every couple of weeks for an easy meal. Usually I get one if I'm shopping later in the day, and I know I'm going to be too tired to really cook something when I get home. I'll serve mine with a side of veggies, rice and maybe rolls. But with our family being so large I have to buy 2 now!
 
We eat the white meat and then I use the leftovers in soups and such. Connor, my grandson, is a PICKY eater but loves my chicken and rice soup made from the leftover broth from the chicken bones and meat. He said, "Grandma, can I have some more" I almost had a heart attack. :happydance2
 
dh would rather roast his own chicken. he's picky. so we haven't bought one in years.
 
I don't get them very often, maybe 4x a year. But the easiest thing to make is chicken and dumplings, especially if you use a biscuit mix. I'll try to find the recipe, but it was to shred the chicken, put it in a pot with a quart of chicken stock, then top with uncooked biscuits. Bake/cook until done, and the biscuits cooking in the stock makes a gravy. The kids loved it!

Maybe this is why I haven't? DH uses a smoker, and usually enjoys making his roasts, and chickens. The best is the pork loin. Next up, turkey fryer he got for Christmas!
 
We love them here, too!! Most of the time we just use the meat on top of a bowl of salad, but sometimes I'll also heat it up with a little salsa and use to make tasty quesadillas. :)
 
I find them too oily and am so picky with knowing what oil is used etc but do buy them for the dogs as a special treat once a week. We have rescue dogs who always need fattening up, so this is the great option.
