What's your families favourite chicken dinner?

I'm in a real funk with meals at the moment so I'd like your help today.

I have some chicken breast fillets......what should I make?

We would usually have schnitzel, stir fry, fried chicken strips, honey mustard chicken.
 
We do chicken with oyster sauce & mushrooms, chicken with marinara & mozzarella baked in the oven, bbq chicken, lemon chicken, or bread crumbs & ranch dressing mix shake & bake.

Because of my school, I haven't been cooking. I woke up this morning wanting a hearty casserole.

Oh, and I had a really good sandwich yesterday with chicken, pesto, grilled mushrooms, & avocado.
 
equal parts mayo and parmesean cheese...and a dollop of garlic crushed or sprinkle some powder..mix well
slop on top..
cook 40 min at 425...and it browns and is so yummy...
serve with noodles, spinach or vegi of choice...and you will fall in love with how easy!!
we do soy (tofu) noodles, cause of low carb eating, but yummy!
 
My family's new favorite chicken recipe is Italian Chicken, Green Beans, and Potatoes. It's super easy and really good!! I add a sprinkling of lemon pepper to the chicken, just because I love it :)



We do similar to this... but I use a variety of dressing or marinade packets and a little less butter. I also make the potatoes in a separate dish, so they get crispier. We all love it!
 
We also like French's crispy chicken!


French's Crispy Onions, Dijon Mustard or Spicy Mustard, Chicken
Coat chicken in mustard, cover with crushed Crispy Onions. Bake 400* for about 20-25 minutes.

You get a better chicken on parchment paper or on a lifted wire rack.

I've made something similar to this. Delicious.

If I have chicken breasts, and I don't know what to do I usually just grill them up...serve them with some homemade sweet potato fries an steamed veggies.

I like the sound of breadcrumbs and ranch dressing and that sandwich also

now thats easy, will try that one later because my kids don't like mayo (WTF?)
 
Parmesan chicken (equal parts grated parm cheese and Ritz crackers, seasoned with garlic salt liberally > dredge chicken in melted butter and then in cheese/cracker mix > bake at 350 for 45 minutes [maybe less depending on the size]) served with garlic mashed potatoes and green beans or a salad.

The most favorite is to just cut the chicken into strips while melting butter in a sauce pan. Put chicken in pan and liberally cover with garlic salt. Served with a variety of sides. It's great to dip in BBQ sauce, honey, ranch dressing, etc., or just plain.
 
Michael made chicken the other night that I really loved. He sautéed an onion and two red bell peppers (or maybe one was orange), cut into small pieces, in olive oil. When soft he added the chicken pieces, cut into strips, until cooked. In another pan he wilted spinach in olive oil. I put all the items in a tortilla wrap and it was so yummy. It was kind of like fajitas without all the spicy - it was a totally different flavor. The spinach gave it just the right amount of moisture. No seasoning other than salt. So yummy and so healthy!
 
one of our favorite summer chicken dishes is just cubed up chicken breast with some seasoning- I usually just use salt/pepper/italian & then once it's cooked, pour in caesar dressing (our favorite is Bolthouse Farms Yogurt dressing- way less calories & fat than traditional dressings) & then pour the caesar chicken mix over your favorite salad mix! So light but yummy!
 
A quick & easy favorite is Salsa Chicken. Season boneless chicken breasts with taco seasoning (I make my own rather than buying the packets). Place in a casserole dish sprayed with nonstick cooking spray. Pour a cup or so of salsa over the chicken. Cover and bake at 400 degrees for 20 minutes. Add a slice of co-jack or other cheese to each piece of chicken and return to the oven until cheese melts. I serve it with brown rice.

Southern Creamed Chicken

1 c sliced mushrooms (1/4 lb)
1/4 c chicken fat, butter or margarine
1/4 c chopped onion, fresh or 1 T minced onion,dry
1 t salt
3 T flour
1 C chicken brooth
1 c milk
dash of hot pepper sauce
2 c chopped cooked chicken
2 hard boiled eggs, chopped coarse
1 jar (2oz) pimentos, well drained and chopped
Hot biscuits, toast or patty shells

In medium saucepan saute' mushrooms in fat until lighty
browned. Add fresh onion and cook until tender. (if using
instant onion, add with salt and flour). Stir in salt
and flour; cook until bubbly. Stir in broth, milk and
pepper sauce. Cook and stir until smooth and thickened.
then bring to boil and boil 1 min. Add chicken, eggs and
pimentos. Heat thoroughly. Serve on split biscuits.
Makes 4 to 6 servings.

my neighbor recipe
Chicken Waikiki Beach

Ideal for outdoor or indoor entertaining. If desired garnish platter
with fresh lemon leaves available at florist shops. Serve with a
tossed green salad.

2 whole Chickens legs or 2 whole chicken breasts
1/2 c flour
1/3 c salad oil or shortening
1 salt
1/4 t pepper
Sauce: 1 can (1lb 4oz) sliced pineapple
1 cup sugar
2 T cornstarch
3/4 c cidar vinegar (;see note)
1 T soy sauce
1/4 t ginger (see note)
1 chicken boullon cube
1 large green pepper, cut crosswise in 1/4 inch circles

1.) Wash chicken; pat dry with paper towels. Coat chicken with
flour.
2.) Heat oil in lrg skillet. Add chicken, a few pieces at time
and brown on all sides. (John cooks until almost done). Remove
to shallow roasting pan, arranging pieces skin side up. Sprinkle
with salt/pepper
3.) meanwhile, preheat oven to 350'
4.) Make sauce: Drain pineapple, pouring syrup into 2 cup measure.
Add water to make 1 1/4 cup.
5.) In medium saucepan, combine sugar, cornstarch, pineapple syrup
vinegar, soy sauce, ginger and boulion cube; bring to boiling,
stirring constantly. Boil 2 minutes. Pour over chicken. Bake
uncovered, 30 minutes. Add pineapple slices and green pepper;
bake 30 minutes longer or until chicken is tender. Serve with
fluffy white rice.

John's notes: Fry chicken till almost done. Decrease vinegar for not
such a strong vinegar taste. Can omit ginger. Cook sauce till like
syrup. If chicken is cooked till almost done, layer green pepper
/pineapple, chicken, green pepper/pineapple. Baste often. He makes
alot and puts into turkey roaster for big gatherings.
