Nancy's Asian Marinade for Grilling Chicken - Nancy had her own catering company and what I like is that after you make the marinade you can freeze the raw chicken IN the marinade and have a couple of ziplock bags in the freezer ready to cook.
Then there's this one which is dirt simple and one which I never made until I had the recipe for about 8 years. Duh...my husband loved it!! I made a gravy from a packet too. btw, the stuffing that comes in a huge box at Costco is really good and my husband would eat it once a week. While the box is huge the stuffing comes in nicely sealed packages.
Chicken McNicken
2 cups shredded cooked chicken or turkey (can use canned chicken, drained.) I use a Costco chicken after the first go round.
1 box Stovestop cornbred stuffing
1 bag frozen chopped broccoli
Grated parmesan cheese
Defrost 2 cups of broccoli in microwave per package instructions. Prepare the stuffing in microwave according to directions. In a small casserole, layer a third of the stuffing, followed by a layer of broccoli and a layer of chicken. Repeat layers until finished with final layer of stuffing. Sprinkle with parmesan cheese. Either bake covered in a 400 degree oven for 30 minutes or use your microwave and follow its main dish instructions. Serve with canned cranberry sauce and either canned or homemade yams.
This should probably serve 4, but 2 people make short work of it in our house...<--- that is the original poster's comments. It made two plus meals for 2 adults plus a small lunch leftover bit.
